16.01.2022 How do you differentiate a fine wine from a every day drinking wine. This question is not only hard to explain let alone write about a method of finding a true distinction between the two. It is said in many circles that wine is what the consumer thinks and likes about a certain wine. In essence this is true, however as there is a difference between a cheap cigar and a handmade one out of special Tabaco leaf so is it with wines and this requires knowledge of the product. Why... do we than have such a huge difference in pricing in wines, you could buy a red Shiraz at Aldi for $3 and than you could buy a Barolo anywhere from $60 to $600, not to mention a Bordeaux wine for anything up to $10,000. To give you some idea this is what happens in the production of these cheap wines: grapes are not hand picked, I have known grapes to be harvested at 8 am in the morning spend 4 hours in the back of the truck in the journey to the processors. Then these grapes are mixed with many other producers grapes and turned into a finished wine in a matter of weeks, with all the flavours artificially added, oak, chocolate, berry, leather, cigar box and roses etc. There are also now wines made not from grapes but chemically formed to look and taste like the real thing, hundreds of containers are being shipped to China every week. A true fine wine grape has 80% of the vignerons total time spent in is tended in the vineyard with 20% to produce a superior fine wine. The grapes are hand picked and cleaned of any leaves and bad grapes before being laid gently into the basket. (Figure 1) Time between picking and crushing is no more that 45min. Some of the very expensive wines, the grapes are picked individually off the bunch as it ripens. A bunch could be picked repeatedly up to 7 times before all of the grapes are used. (Figure 2) These are very carefully treated and go through a washing process to remove any pesticides or microorganisms including sterilization. All this is only a small part of why this wine will be a fine wine, also of course is the type of grape, the root stock type, the clone and area exposed to weather along with degrees of the slope and soil. In my previous Blog you can read about the process that is required to produce the end product after many years.

14.01.2022 The Fine Wines from the Langhe Region Welcome back to our readers of Piemonteimports Blog, last Blog I promised to explain all about the DOCG Denominazione di Origine Controllata e Garantita Registered And Guaranteed Designation Of origin (translated to English). The DOCG wine designation was created in 1980 to differentiate the top Italian wines, as the DOC status was graded to liberally. In order for a producer to grow the Nebiollo grape, and name his wine which is cov...ered by the DOCG Articles. They need to have their vineyard in the designated area as per Article 3 of the Republic President Decree dated April 23rd 1966. Please see www.langhevini.it (select language) (then select Denominazioni and select Barolo) on this page select Disciplinare. Here it clearly states all of the requirements in order to grow, produce and sell any of the designated DOCG wines. Both Science and mathematics is part of this control, let me explain. In Article 4 Growing Regulation Paragraph 2. States that the growing conditions in the vineyards must fulfill the following requirements: - Soil: clayey, calcareous, siliceous or any combination of these. (End of quote) This is why you find Baberra and Dolcette or other variety of grapes grown in the designated areas because the soils do not meet this standard. In paragraph 3. It talks about the maximum yield in grapes per hectare on vineyards specializing in the production of Barolo wine The maximum yield in grapes per tone is 8 (t/ha), this can be checked mathematically, for example if you have a patch of say 0.8 of an hectare than your planting is say by the Guyot method with plant spacings of 2.2 x 0.8 giving you 5600 root stock. The yield would be limited to 33 quintals per hectare. This has been worked out after picking the vines twice of smaller bunches and leaving the better ones on the vine during the growing season. This is monitored very regularly that if you where to produce a lot more juice you would not be designated the official DOCG sticker unless you notified the designated authority well before harvest time telling them of the exceptional vintage that you are expecting and request an extra litters times X. once this is granted you are able to harvest all of the grapes and use them to produce the famous Barolo. For example, in this case it is expected that this vineyard will produce 3.740 by 740ml bottles. Please read all of the Articles it makes very interesting reading, and certainly makes one understand the work that the growers put in to producing such a wonderful wine. In my next blog I want to write about the traditional and new ways of producing this amazing wine. Making of Barolo is 80% in the vineyard and 20% in the cellar. It doesnt need to be a special occasion to drink Barolo. Enjoy!

05.01.2022 Why Age Wine in Oak Barrels? Before there were glass bottles (1600s and before), most wines were stored and sold in wooden barrels. In fact, paintings from around this time period often show wine barrels strewn about. And, while weve outgrown the necessity for barrels to store and transport wine, weve come to acquire a taste for it. Oak barrels are an integral part of modern winemaking. Here are just some reasons we age wine in Barrels:... It adds flavour compounds and aromas such as vanilla, clove, smoke and coconut It allows the slow ingress of oxygen, a process which makes wines taste smoother and less astringent It also adds tannins It provides a suitable environment for certain metabolic reactions to occur; this makes the wine taste creamier. Oak has become the accepted method used to affect the taste of wine; these oak flavours are obtained by using a single Slovenian barrel in the 2000+-liter size or in the case of a Barberra wine it is now modern practice to age 50% in Slovenian oak and 50% in barriques for a minimum of one year. The size of the barrel, of course, has a great influence on the final taste of the wine, the larger the barrel the fewer lactones and oxygen are imparted into a wine. ~Different kinds of oak used for winemaking~ There are 2 primary species preferred for winemaking: Quercus alba or American white oak and Quercus petrea or European white oak. Each species offers slightly different flavour profiles. Additionally, the climate where the oak grows also affects flavours. So for example, wines aged in Quercus petrea from Allier, France will taste different from wines aged in Quercus petrea from the Zemplen Mountains forest in Hungary. European Oak Found in France, Hungary, Slavonia (Croatia). American Oak Found in Missouri and the Midwest. All this talking about barrels and wine flavors has made me crave for a good Barbaresco!
