25.01.2022 The other delicious Paleo dish of the week was a Thai chicken pizza. Base made from ground cashews, non-peanut satay sauce topping, covered with shredded cooked chicken, goats cheddar, chopped onions & chopped cashews, cooked & then covered with bean sprouts, spiraled (purple) carrots & fresh coriander. My daughter asked & asked for this & then said how awesome it was with literally every mouthful she took . Happy to make for anyone who fancies trying it
25.01.2022 So this post has been on my mind since yesterday, but as it was 10.25pm when I finally left the kitchen last night, not surprisingly, its only happening now! I dont normally mention much about the Paleo lifestyle I follow, however, as the order Ive been preparing since yesterday is 100% Paleo, I thought Id change that now. I dont know how prominent Paleo is in the UK (I left there almost three years ago now ), but here in Australia I think youd be hard pushed not to ha...ve at least heard about it, even if you dont fully understand what its all about. Put simply, its about eating foods that our bodies were intended to consume and not those which are the result of the agricultural revolution. Put even more simply, its about eating the best quality foods you can afford, in their most natural states ( ie not tampered with). It is not a fad or a craze, but a movement that people worldwide are now finding really benefits their health, especially those people with a variety of autoimmune conditions. The Paleo diet (its NOT a diet) excludes all grains,dairy and processed sugar, all of which are known allergens and encourages good quality meat & fish, fruit & vegetables, nuts & seeds AND healthy good oils, such as coconut, avocado, olive & nut oils. Its not perfect, for example it would be hard for a vegetarian or those with nut intolerances to follow. It also means you need to put thought & effort into what you eat, which is something I know isnt for everyone, but for myself, my family, and many of my friends, it suits us down to the ground. Here are pics of what Ive made for todays order and every bit of it conforms 100% with the Paleo philosophy . I have always been a gannet when it comes to food & have loved cooking since I was a little girl, but this has given me a new passion for food & health. Ill leave you to make your own minds up (There was also bolognese & a frittata, but no-one needs a photo to know what they look like )

24.01.2022 Not sure if I was ambitious or just plain stupid today . My daughter asked me if I could please make apple pie which is something I do, ummm....never! So, I decided to surprise her & make one, but I couldnt quite bring myself to make normal pastry. I wanted it to be a totally healthy pie. So, I embarked on the nail biting process of making Paleo pastry. Were yet to try it, it wouldnt win any prizes for finesse, but at least I know Im delivering a healthy, nutrient dense pie. Heres the whole process....
23.01.2022 Yet another first in order terms this week. I was asked if I could provide some food for someone who had been widowed unexpectedly in the last few weeks. I forgot the photos ( oops) but I happily provided single serve portions of three different soups, butter chicken, Thai chicken curry, bolognese and a beautiful BBQ shredded chicken. All able to popped in the freezer then simply taken out & reheated when you need to eat, but cant really be bothered.... Hopefully itll put a smile on someones face
23.01.2022 I think I should possibly rename my little business as Pitts whatever youd like me to cook pantry as today I delivered a tasty & nutritious breakfast order. Another occasion when I was asked if I could, and I said, of course. Chocolate chia puddings which, for a batch of nine work out much cheaper than the Chia Co pods you can purchase in local supermarkets, and from personal experience, taste a whole lot better. Also, cashew & almond yogurt. Not truly a yogurt, rathe...r a very good vegan substitute. Both keep in the fridge for at least five days but also freeze perfectly. Served with fresh berries and (for the cashew & almond yogurt), some cacao nibs, they offer a breakfast that will really set you up for the day $50 for a batch of nine chia puds and six cashew & almond yogurts.

22.01.2022 Two new dishes appeared in the house last night! Pomegranate & walnut salad which was light, fresh & full of flavour and a clean chocolate cake, which looked sinful, but was gluten, dairy & processed sugar free!! The frosting was super healthy & it will definitely be made again as a special occasion dessert/cake. See what you think

18.01.2022 I love the way Pitts Pantry continues to evolve. This week I delivered working lunches for 7-8 staff from my childrens school. Ive catered for them previously on their training days but this time they asked if I could provide finger food. Thankfully I live close to the school, as delivering food straight from the oven adds a different angle to the organization of the order as a whole! Homemade pizzas & frittatas delivered hot, dips with crudits, and healthy afternoo...n tea options were all received with smiles & thanks! I really appreciate the fact that the school has supported me in my venture from the very beginning . When making pizzas I can provide homemade dough bases or I have two gluten & dairy free options which are the ones I make for my family. These options contain almond meal but are both delicious & are able to be picked up just like traditional pizzas. Please enquire if you are interested. Please also be aware that I would ordinarily supply pizzas ready for the oven, not pre-cooked .
18.01.2022 Busy morning in the kitchen making yummy food for friends to take away this weekend. The old favourites....Thai chicken curry and bolognese Thai chicken bites which are an awesome in-between meals snack, and chocolate chia puddings, which pack a good punch of protein & iron at breakfast time (or whenever else theyre eaten)

16.01.2022 Fancy a slightly more special evening meal once in a while?? This is one of my favourite meals from when I lived at home and is just great for colder nights. Stuffed peppers (capsicum) topped with a rich cheesey sauce. Baked for an hour in the oven, the end result is divine. Ive also done one portion with a potato instead of the capsicum for my son who doesnt like them. Im sure it would also work with eggplant (aubergines) if desired.... If anyone fancies trying this just get in contact. Price available as required
16.01.2022 It made a sweet change this week to have an order solely for muffins & cookies this week . Blueberry muffins, banana muffins and seeded blueberry cookies (which I forgot to take a photo of )
15.01.2022 Final order of the week done, delivered & well received It always puts a different spin on the order having to deliver hot from the oven but being adaptable is all part of the service .
15.01.2022 So were moving tomorrow, were totally disorganized as basically we dont have the time to move , and where am I?? In my favourite place cooking an order for a lovely friend. Making it an even more positive effort however by making it our dinner for the next few nights too . Now thats the most organised bit of this moving plan yet . Photos to follow....

14.01.2022 Ok so I lied....this frittata looked so good I thought photos were necessary . Just wish it wasnt for someone else . Packed full of onion, carrot, sweet potato, zucchini, tomatoes, bacon, goats cheese (& eggs of course). Its quite literally a meal in itself & tastes great either hot or cold
14.01.2022 And theyre ready for....the freezer! My customer told me they were going straight into the freezer so I could make them when I wanted & shell collect at the end of the week!! That takes the edge off a busy Weds-Fri for me
13.01.2022 Sometimes people knowing about my love of cooking is a bit of a mixed blessing . Last week a lovely friend asked if I could help her out with cooking for an event our pony club was hosting. Only too happy to help with making some soup, I can honestly say that by the end of the THIRTIETH litre, I hated everything about pumpkins . I really dont think its ever taken me so long to prep veg. Thankfully it was worth the effort & I dare say Ill repeat the exercise .
10.01.2022 Not sure if I should say this but the shepherds pie was, without doubt, the nicest Ive ever had . Totally new recipe & I can wholeheartedly recommend it. Dinner, seconds, kids lunches for tomorrow & still a bit left over ....yum
10.01.2022 Its been a busy few days in the kitchen, but at least now that the school holidays are over I was able to cook in peace . Pitts Pantry continues to evolve & recently people are tending to just tell me their needs & let me make suggestions. Alternatively, they are just deciding what theyd like & asking if I can accommodate it. Either way, its working well & Im happy to be able to help where I can. Todays order was almost 100% Paleo by request and incorporated a deliciou...s new sweet recipe of sticky date pudding with caramel sauce. It tasted every bit as naughty as a regular recipe but in fact was gluten, dairy and refined sugar free . In addition to the healthy options was a request for a curried beef pie. Not something I make regularly but the end result looked good. Healthy, warming curries & soups were also on the menu and are just perfect for the freezing winter weather were currently experiencing. Thanks for the continued support. It gives me a great excuse to stay warm inside
10.01.2022 Its busy in the kitchen this week!! Order yesterday for a few things & then a large eight item order that I need to prepare over today & tomorrow! The biggest bonus however is that Im managing to sort many of my own familys meals out at the same time . There is definitely method in my madness . Yesterdays efforts offered up Shepherds pie, a gluten free quiche & some yummy blueberry & lime (Paleo) muffins.
10.01.2022 The week started early in this house with two of the children leaving for Canberra at 5.30am. The school wanted to take something for tomorrows morning & afternoon tea and so I packed off two children & forty muffins - half blueberry & lime, half banana. I didnt start off advertising baked goods, however I am doing more & more of them so if anyone needs anything for an afternoon tea or a party, please ask. I dont however do fancy decorating as I have neither the skill, ...nor the patience for elaborate decorations. Simple , unfussy, muffins, cakes & loaves are far more me. Desserts too can also be made on request. I hope the kids enjoy them
07.01.2022 Last week started with some pretty chilly mornings in this area. Only 1 degree on Thursday which is cold no matter where you are in the world. That so, I was easily persuaded to cook several warming winter dishes. Thick spicy pumpkin soup and a roasted tomato & parsley soup which was also spicy due to the addition of chilli flakes Following that was the ultimate in comfort food.....chicken pie. One with crisp puff pastry (which my daughter was horrified to hear I hadnt made myself) and a Paleo friendly version with a mashed parsnip topping. Both served with French style peas and smashed carrots. There were definitely no leftovers
07.01.2022 So the combination of orders, my husband & son going away for a week and a constant stream of children through the house this week have led to me being rooted to the kitchen every single day . Lots of the usual suspects cooked as well as a couple of newer dishes. Its all good, but Im glad its the weekend I didnt take photos of everything, but the week consisted of beef lasagnes, chicken & broccoli lasagnes, Thai chicken curry, bolognese, chocolate zucchini muffins, o...melette muffins, salted chocolate cookies, apple & cinnamon muffins, more chocolate cookies, healthy breakfast shakes, sausage hotpot, chilli, Thai chicken balls, hummus and a pumpkin, cashew & Parmesan dip! For very good reason, my daughters & I went out for dinner last night
07.01.2022 Does anyone else find school holidays more exhausting than term time?? Its so crazy in our house Im actually doing one order over three days & delivering in stages . Not ideal but sometimes thats just the way that it goes! Roll on next week when school goes resumes & we can all go back to just being busy

05.01.2022 Straight from the oven.....capsicum stuffed with minced beef, full of garlic, fresh sage, tomato pure, paprika & almond meal (in place of breadcrumbs). Sat on a bed of seasoned sliced onions & finely chopped tomatoes which then cooks in the sauce from the cheese sauce. Yummmmm
05.01.2022 For once it was me who needed a sweet fix so lucky for my children, theyll get Friday afternoon tea! What better way to end a crazy week Apple & cinnamon muffins - Paleo, gluten & dairy free. Sadly not vegan friendly (or for anyone who dislikes apple & cinnamon )

03.01.2022 Its been a while since I posted on here, but due only to being busy in the kitchen, which I guess, is a good thing. My orders also continue to grow in size which in my eyes makes this all worth the effort, even when the effort required is substantial So in the last couple of weeks Ive provided sustenance for a road trip to Adelaide, a full on feast for 15 people on a retreat and tomorrow, lunch for a group of school inspectors ( better make this one good as theyre inspec...ting my childrens school ). Its been full on but thankfully I dont tire of cooking, plus Im ever thankful for the support I receive. Heres just a few pics of recent dishes......
02.01.2022 Since yesterday Ive been working on an order my sister would call mahooosive. My biggest order to date providing food for a dozen people for a two day retreat. It has been flat out but I can now sit here & feel very self-satisfied. Everything is cooked, packaged, labelled & refrigerated ready for delivery tomorrow. My son made me feel really good earlier this evening when he asked if I was pleased with myself & then said you should be mummy because youve proved you can d...o big orders like this. The order was a mix of menu & non-menu items including a fair amount of baked goods. I am happy to cater for any need so if you see anything in a photo which isnt on the menu, please just ask. 02.01.2022 Flourless Pear Cake.....awesome dessert or for us today, overdue birthday cake. Not a Paleo recipe, but with one small tweak becomes refined sugar free, as well as grain free and is a winner with everyone......yum
