25.01.2022 It has been a very hard time for all Melbournien people. We can only hope it will be a normal life back soon. Today I will share with you recipe for vegan pate. I think it is important to introduce more vegetables and pulses to our diet. This pate I made before and my family loved it. You will be surprised that it taste like a good quality meet pate. You need 2 onions, 2 bay leaves, 2 allspices, 2 cloves, oil, 2 cups cooked green or brown lentils, it will be 200g dry lentils.... I do recommend you to cook your lentils, it will be better for pate, 1 cup cooked millet, about 100g dry millet, 100ml vegetables oil, 2-3 tablespoons soya sauce, 1 teaspoon marjoram, some nutmeg, 1 tablespoon of savoury yeast flakes, salt and pepper, 4-5 chopped prunes or half cup of dry cranberries. First you cooked lentils and millet. Chopped onions and fry them with bay leaves, cloves and allspices with some oil. Onions should be slightly browned. Remove spices and put your onion to a big bowl. Now add rest ingredients except dry fruits. Mix well. You need to blend all mixture with hand blender. Try pate if you need to add some extra herbs and spices. Add prunes or cranberries and mix again. Now transfer the mixture into a long tin about 20 /11cm. Bake for 45 minutes in warm oven 180 degrees. You have to leave pate to cool down completely before you will slice it. I will be very interesting if you make it. I do recommend you to try it. Pate tastes great with home made bread and Polish vegetables salad. Enjoy



25.01.2022 Second stage of making bagels. Now you will have a beautifully bubbling starter. You add 180g white bread flour, 1 tablespoon honey, 2 teaspoons salt, 1/2 teaspoons dry yeast. Knead the dough with mixer, cover and leave in a room temperature for 2 hours to rise. After this time you need to put the dough into the fridge for 12 hours. Tomorrow is shaping and baking time.

24.01.2022 In Poland we have many different street food or you can call it fast food. We have zapiekanka, rurki, and gofry. I would like to introduce you Polish way to have waffles- gofry. You can see on the street people carry big rectangular waffles cover with whipped cream and jam, or just with jam and a lot of icing sugar. They are crunchy and so delicious. I have one good recipe for waffles and I am happy to share it with you. You need 250g plain flour, 2 teaspoons of baking powde...r, 125g melted butter, 4 eggs,250 ml buttermilk. First sift flour with baking powder. Add egg yolks, melted butter, buttermilk. Now beat your egg whites and fold them into the batter. You can add some sugar but this way you can serve them sweet or savoury. I prepare my batter in the evening and keep in the fridge for our breakfast. Of course you need to fry the waffles in waffles iron. I serve them with fresh fruits or frozen fruits which I warm up in the pot with small amount of water and maple syrup. 23.01.2022 I haven't post any recipe for sourdough bread recently. To be honest last two weeks I mainly refreshed my starter and...never had time to do it. So I have a big jar of sourdough starter in my fridge. Today I decided to bake some bread for next week. I will share the recipe tomorrow. It will be rye German style loaf. Today I also made some rolls with...you never will guess .. carrots. I haven't taste them yet because they are still warm but they look and smell absolutely ama...zing. You need 450g white bread flour, 300ml warmish water, 7g dry yeast, 1 teaspoon salt, 50g oats, 1 tablespoon of vegetables oil, I always use grapeseeds oil, 100g finely grated carrot. You mix dry yeast with water, add salt and 300g flour. Mix well, add oats, and oil and still mix, than add grated carrot and rest flour.My dough was sticky and mix it longer adding extra flour. When your dough is smooth and elastic and not sticky transfer it into a big bowl spread with oil. Now cover the dough and leave in a warm place for one hour. After this time transfer your dough into a flat surface lightly floured. Divide the dough into a ten balls and shape your rolls. On next post I will show you how to shape them. Spread your rolls on a baking tray, cover and leave for 30 minutes. Bake them in a hot oven, 200 degrees for 20-25 minutes. Enjoy

22.01.2022 Chocolate meringue cake with raspberries coulis and mascarpone cream. This cake looks so beautiful that I quickly made decisions to bake it. It is not too sweet and perfect for summer.... You need 6 egg whites in a room temperature, 300g caster sugar and 30 g Ducht cocoa. You need to prepare baking tin with baking paper. Draw 3 20 cm circles on the baking paper. Now beat the egg whites with electric mixer at medium speed until soft peaks will form. Gradually add caster sugar and increase speed. It should take about 10 minutes. Add sifted cocoa powder and fold it gently into egg whites. Spread the meringue in the baking paper and bake in preheated oven 140 degrees with fan and bake for one hour. You can leave meringue in the oven until it will completely cool down. Raspberries coulis: you need 500 g frozen raspberries, 2 teaspoons gelatin, 3 tablespoons sugar, 2 teaspoons potatoes flour. Mix gelatin with 4 tablespoons of cold water. In a pot heat raspberries with sugar until is melted. Add flour mix with 1 tablespoon of water. Mix well and bring raspberries mixture to boil. Now add gelatin and warm up but not boil. Leave coulis to cool down. The best is prepare the coulis one day before you make the cake. Cream: 400ml thicken cream, 300g mascarpone cheese, 3 tablespoons sugar. Whisk thicken cream with sugar. When is stiff add mascarpone cheese and whisk for a little longer. To assemble the cake you need 150g fresh raspberries, mint leaves and cinnamon. First put one of your meringue on the plate. Spread 1/3 of cream on the top and 1/2 of coulis. Put some fresh raspberries on the top. Now add second round of your chocolate meringue and repeat with cream, coulis and fruits. Cover it with third meringue and decorate with rest of cream, fresh raspberries, mint leaves and cinnamon. Enjoy!

22.01.2022 Today is 1st day of Spring . It is great to feel the sunshine, smell all beautiful spring flowers. I am looking forward to get some summer fruits, and enjoy a long days. I would like to share with you another recipe for Polish gofry, waffles. Someone asked me if my last recipe gives crunchy waffles. Unfortunately the previous recipe is great but you will get rather softer but full of flavour waffles. I found a new recipe and yes these waffles are amazingly crunchy.... You need 250g good quality plain flour, you need to use one for cakes and pastry, sieve flour with 1 teaspoon of baking powder, add pinch of salt, 1 egg yolk, egg white you will whisk until became thick and fold into the dough in the end. 1 tablespoon of sugar or honey, 3 tablespoons of oil, I always use rice bran or grapeseeds one, and 250 ml milk. You can add 125 ml full fat milk and 125 ml sparkling water. Mix everything well and bake in your waffles machine. They will be great with berries fruits. Smacznego

22.01.2022 This is way how I shape the roll. Take piece of dough on your hand, flat it and than try to form the ball putting edges of your dough inside.Let me know how you are doing. Enjoy

22.01.2022 Rolls with linseed. I made them for the first time. Delicious, a little sweet, nutty flavour comes from some rye flour and linseed and healthy. I do recommend you to try and make them. You need: 2 and 1/4 cup of white bread flour, 1 and 1/4 cup of rye flour, I mixed 1 cup of rye flour with 1/4 cup of spelt white flour. Put both flours into a big bowl, add 5g dry yeast, 1 teaspoon salt, 1 egg, 1 tablespoon of honey, 1/2 cup of ground linseeds, add 160ml warmish milk, 125ml war...mish water. Mix in your mixer. If your dough is too sticky and hard add more water, if it is too soft add more flour. Knead it until you get smooth and glossy dough. Now add 1and half tablespoon of oil. Transfer everything into a big bowl spread with oil. Cover and leave for one hour. Now transfer the dough into a flat surface lightly floured, divide the dough into 8-10 rolls. You can shape them round or into cylinder. Put your rolls on the baking tin and cover. Leave them to rise for 40 minutes. After this time brush rolls with egg yolk mix with milk, sprinkle with linseeds or any other seeds. Bake in a warm oven 180 degrees for about 20 minutes. Good luck and enjoy

21.01.2022 I hope you all are safe and warm at home. Weather in Melbourne does not spoil us. I have a new recipe to keep you busy and warm. Recently I bake a lots of rolls, they disappear too quickly, so I am forced to make more. This way I have so many new recipes to share with you. Today there are rolls. One bottle for rolls and some whatever is left for you . ... These rolls were very popular in my place. They taste so good and you can eat them just with butter and.... You need 500g white bread flour, 300g wholemeal bread flour, you can use white flour only or if you have spelt flour you can use instead. You sift your flour into a big bowl, add 12g dry yeast, 2 teaspoons salt, 2-3 tablespoons of honey, 2 cups of beer, warm your beer up just to room temperature. Prepare 30g butter in a small pot and melt it, leave it to cool down. You will also need 115g grated cheddar cheese. Now you mix your dough, in the end add melted butter and in last moment grated cheese. You remember if the dough is too hard add some warmish water, if the dough is too liquid add some flour. Always be very patient and mix longer until your dough is smooth and form the ball. Now transfer your dough into a big bowl spread with oil. Cover it and leave to rise in a room temperature for 1 and half hour. Put the dough into the flat surface lightly floured. Punch your dough to remove any gas and leave for 2-3 minutes. Now you form 10-12 rolls. Transfer your rolls to the baking tray, cover and leave for half an hour. Melt 25 g butter, you will need it to brush your rolls and 100g grated cheese to sprinkle on the top of each rolls. Bake your rolls in a hot oven 200 degrees for 18-20 minutes. I kept mine too long and they were a little too brown, but it didn't stop us to gobbled them quickly. I hope you will like them as much as we did. Enjoy and please let me know if you like them

21.01.2022 Bagels, I absolutely love them. I tried many different recipes and this one is really great. You will make them in 3 stages. First day or evening: 240g white bread flour put into a big bowl, add 1/2 teaspoon of dry yeast and 260 g warmish water. Mix everything, cover and leave for 24 hours. Next stage tomorrow.

16.01.2022 I promised to share with you the recipe for honey rolls. My son loves them, they soft, slightly sweet, great for breakfast. You need: 450-500g white bread flour, it depends on flour so use less and than add more if it needs, add 10g dry yeast, 1 egg, 1 egg yolk, 85g honey, 1/2 teaspoon salt, 240ml warmish milk. Mix everything in your mixer and than add 60g melted and cooled down butter. Mix well until you get nice and glossy dough. Transfer your dough into a big bowl spread w...ith oil, cover and leave for 1.5 hours. After this time take the dough into a flat surface lightly floured and form 12 rolls. Put them into a tin 30/22 cm and again cover them and leave in a warm place for 40 minutes. Bake your rolls in warm 180 degrees oven for about 20 minutes. When you bake your rolls prepare mixture - glaze of 30g butter, 20g honey. Warm them up in a small pot. When you take your rolls from the oven, brush them with glaze. Enjoy your rolls, and guess what I am making today, my favourite rolls. I wonder who will guess. I will post some clue in couple of hours. Think what it could be

I plan to bake poppy seed strudel, the honey cake, plesniak, crescents with sour cherries jam, chocolate & cinnamon meringues, cinnamon rolls and more. Have a great week .

13.01.2022 Happy Valentine's Day I have special recipe for you, meringue cake with coffee cream and berries fruits. You need 6 egg whites at room temperature, 300g caster sugar, 3 teaspoons cornflour, 1-2 teaspoon lemon juice, 500 ml thicken cream, 250 g mascarpone cheese, 3 tablespoons icing sugar, 2-3 tablespoons freshly ground coffee, fruits.... Prepare 2 trays with baking paper and mark on each 23-25 cm circle. Heat oven to 160 degrees. First you whisk egg whites with pinch of salt, I always start with high speed, when it get soft peaks add sugar 1/4 of cup at time whisking for 1 minutes after each addition. When you add all sugar you whisk for 3 more minutes. Add flour and lemon juice and mix for couple of seconds. Now transfer meringue into your trays. Make two circles and try not to squashed too much your meringue. I just slowly and gently move meringue from the bowl into tray using a big spoon. Put into oven and bake in 160 for 5 minutes, reduce oven to 120-130 with fan and bake for 90 minutes. When cake is ready turn the oven off and leave inside for 15 more minutes with slightly open door. Leave meringue to cool down. When you want to assemble the cake you whisk thicken cream with icing sugar. When is done add mascarpone cheese and grounded coffee and whisk for a little longer. Now transfer one circle of meringue to your plate. I always put it upside down, spread cream, add fruits, I used strawberries and blueberries, but you can add any fruits, now I cover cream with second meringue and spread rest of cream on the top and decorate with fruits. Keep your cake for minimum 2-3 hours in the fridge before serving. Enjoy

13.01.2022 On Thursday I made pumpkin rolls for my family. I have never done them before and they are delicious. These rolls are soft, have delicate sweetness from pumpkin and have nice orange colour. I will definitely make them again. They almost gone. You can try to bake them. First you need to make a pumpkin puree. I steamed my pumpkin, mashed it and put on the sieve to remove unnecessary moisture. You can bake your pumpkin. You need to cool down purée before you mix it with flour.... You need 375g white bread flour, add 10g dry yeast, 1 teaspoon salt, 180ml pumpkin puree, 125ml warmish milk, prepare 45 g butter in a small pan, melt it and cool down and add in the end of kneading your dough. I did everything in my mixer. Now transfer your dough into a big bowl spread with oil. Cover your dough and leave for one and half hour. Next put the dough into a flat surface lightly floured and divide the dough into 8 balls. Now shape the rolls and put them on the baking tray. Cover your rolls with tea towel and leave in a room temperature for 30 minutes. Before you will bake your rolls brush them with eggs and sprinkle with pumpkin seeds. Bake them in a warm oven 180 degrees for about 20-25 minutes. I hope you will enjoy them.

10.01.2022 Final stage, yes we are going to have our bagels Who doesn't like bagel with cream cheese, ok salmon if you not vegetarian. Day 3 we are taking our dough from fridge and leave in a room temperature for one hour. Next you take the dough into a flat surface lightly floured and divide it into 10 or 8 equal balls. You can form bagels in two different ways. First you just form a ball which you leave to rise and than you make a hole in the middle with you finger. Second method you... form cylinder which ends you stick together and form a bigger circle and than you leave it to rise. Maybe try to do two methods so next time you can pick your favourite one. Now after forming your bagels, put them on baking tin and cover. Leave them to rise for 30 minutes. Prepare a big flat pot with boiling water, teaspoon of baking soda and molasses or sugar just one tablespoon. You need to cook bagels for 2 minutes each side. Take them from the pot after the cooking time, transfer them to baking tray. When all bagels are cooked, brush them with egg yolk mix with milk or water, and sprinkle with sesame seeds, poppy seed or just leave them plain. Bake them in a hot oven 200 degrees for 20-25 minutes or until they will get nice golden colour. I hope you will enjoy your bagels. Please let me know how did you go with them. Good luck See more

07.01.2022 Hello, beautiful day in Melbourne. Guess what I am doing today?

07.01.2022 Another week at home. I love this time when I don't have to rush anywhere, can spend time with my family and do my baking. I hope you keep refreshing your starter for sourdough bread. If yes I have another recipe for you, this time for French country loaf. This is one of the best bread I made so far, take time to make it but it is not too hard and it tastes absolutely fantastic. Bread is moist, has this natural sweetness and richness.... 1. Evening: you need to refresh your starter. Take your starter from the fridge one hour before you will refresh it. Now put your starter into a clean glass bowl, add 1/2 cup of rye flour, 1/2 cup of warmish water mix everything and cover with cling film. Make some holes because it needs some air for fermantation. Leave the starter in a room temperature for 12 hours. 2. Next day in the evening prepare a medium bowl. Put 50 g active starter, 200g warm water (29-32 degrees), 50g rye flour, 200g white bread flour. Mix well, cover and leave for 8 hours in a room temperature. 3. Next day in the morning prepare a big bowl, could be from your mixer, add 740g white bread flour, 60 g rye flour, 620g warm water(32-35 degrees). Mix well, cover and leave for 30 minutes. After this time add 21g salt, 2g dry yeast, and 360 g mixture you prepared in day 2. It will be some starter left which you can put into a glass jar and keep it in the fridge until you bake another bread. Mix everything in your mixure for 5-10 minutes. It will be very loose dough. Now leave it to rest for 10 minutes and again mix the dough for 5 minutes. Repeat the procedure until your dough will form the ball. Prepare a big bowl spread with oil. Wet your hand with water and transfer the dough into the bowl. It needs to rest for 5-6 hour but you need to fold it with wet hand every half an hour first 4 times and than every one hour. Your dough will double in size. After 6 hours you transfer your dough into a flat floured surface and form a ball. Prepare basket with towel, sprinkle generasly with flour, and transfer your dough into the basket. Cover whole loaf with basket with plastic bag and now put into the fridge for 8-12 hours. 4. Put a ceramic big round pot with lid into a cold oven, heat the oven to 240 degrees. When oven will reach the temperature take the pot from the oven and transfer your dough from the basket into the pot. Take the dough straight from the fridge. Be very careful and don't worry if the surface of your loaf will be not perfect. Now cut surface of the loaf with sharp knife, I use pizza cutter, cover the pot with lid, transfer into the oven and bake 30 minutes. After this time uncover the pot and bake 20 minutes longer. Take bread straight from the oven, and transfer to the rack to cool your bread down. Good luck

06.01.2022 Bread with dry fruits and nuts. This is a very easy loaf to make. You need 450g white bread flour, add 2 teaspoons of dry yeast, 1 tablespoon of honey, 1 teaspoon salt, 160-180ml warmish milk, 1 egg, 2/3 teaspoon of cinnamon. Mix well in your mixer, than add 100g melted and cooled down butter. If your dough is too dry add some water, if it is too loose add more flour. When your dough is ready and form the ball add 120g dry fruits ( I used 50g currants, 30 g cranberries, 20 g ...goji fruits, and some prunes). You can use fruits you like the most. Now add 30 g mixture of nuts, I had some walnuts and pistachios, you need to toast them first on the pan and chopped. Add orange zest from 1 orange. Transfer your dough into a clean bowl spread with oil. Cover and leave for about 1 hour. After this time shape your loaf and put it into a tin. Cover again and when it double in size brush with egg yolk with teaspoon of honey and some cinnamon. Put the loaf into the oven, cover with aluminium foil and bake for 10 minutes in 200 degrees, than uncover and bake for 30 minutes in 175 degrees. This bread is delicious. I have to stop myself to eat too much. You can add more fruits and nuts. Tomorrow I will share with you recipe for honey rolls.

06.01.2022 Polish sourdough bread. It is s very easy bread to make. It tastes great and it is always popular in my house. Yesterday I had fresh and still warm slice of this bread with butter and fresh tomatoes. It was the best food I always had in my grandmother place with fresh milk straight from the cow. It was yummy You need to refresh your starter day before.... Next day you put 550g white bread flour, I used spelt white flour, 50g oat bran or rye flour, 1 teaspoon honey, 1 tablespoon salt, 1/2 teaspoon dry yeast, but you don't need to use them but your dough will need more time to rest and rise, 300ml warmish water into a big bowl. You mix your dough in the mixer until is smooth and not too sticky. You always can regulate consistency of your dough with more flour or water. Be patient and give it a time. Now transfer the dough into a big bowl spread with oil. Cover your dough and leave it to rise for 1.5 hours for until bit double in size. After this time form the long loaf of bread and put it into a tin brushed with oil. Cover the loaf and leave it to rise until it double in size. It took me a long time, probably 2-3 hours. Warm your oven to 230 degrees, cut surface of your loaf, brush with egg and sprinkle with sesame seeds or poppy seeds. Bake in a very hot oven for 10 minutes, after this time reduce temperature to 200 and bake for 20-25 minutes or until is nicely gold. Enjoy

06.01.2022 Jagodzianki Polish sweet rolls with fresh blueberries. My favourite one. When I was making poppy seed strudels for my customers I decided to make extra yeast dough. I made these yummy rolls for my family. All Polish people adore blueberries rolls. This is the best treat in summer

05.01.2022 My mum made absolutely beautiful, rich and full of flavours birthday cakes. She made walnuts cake with chocolate cream, poppy seeds birthday cake with coffee cream, meringue cake. All her friends asked her to make them for a special occasion. Maybe that's why I always felt intimidated to make them on my own. I decided to try to bake the poppy seeds tort with coffee cream. It looks great and person who order it said it tastes delicious. I am so happy.

04.01.2022 German style rye sourdough bread. I love rye bread, always had it in Poland. We have so many great bakeries with huge selection of breads. This loaf will be one of my favourite.... First you need to refresh your starter day before you make your bread. Next day you put 250g rye flour, 100g spelt white flour, 130g white bread flour into a big bowl. Now add 100g refreshed starter,5g dry yeast, 1 tablespoon oat bran, 10g salt, 1/4 teaspoon of ground cumin and coriander, 1/4 teaspoon of fennel seeds. Now put 350g warmish water. Mix everything well in your mixer for about 8 minutes, stop and rest the dough for 5-10 minutes. Now mix for 5 more minutes. The dough has to be smooth and form the ball. Transfer the dough into a big bowl spread with oil. Cover and leave for 2.5 hours. Every half an hour you need to fold the dough. Look at one of my video in previous posts. After this time you put the dough into a flat surface lightly floured and spread the dough. Form the oval loaf and put it into a tin spread with oil and sprinkle with oats on the bottom of the tin. Cover the dough again and leave to rise until the dough will double in size. Bake your bread in a very hot oven 240 degrees for 10 minutes. You can put on the bottom shelf flat tin with ice or boiling water. You will get this way nice crust on the top of the bread. After 10 minutes reduce temperature to 200 degrees and bake the loaf for 20 to 25 minutes. Try it. I am sure you will love this loaf.

02.01.2022 Recently I worked on my starter. It didn't look very fresh and lively. Last week I've been adding some extra rye flour with water and keep it on my kitchen bench. It looks much better now and guess what, it motivated me to bake bread more often. Yesterday I baked rye bread with a big amount of rye flour starter. It is absolutely great and full of flavour loaf. This one is not so hard to make. You can try yourself. You need 400g refreshed starter. Day before your baking put ...more flour into your starter or even better do it for a whole week and keep your starter in a glass bowl cover with cling film with some wholes. When you have enough starter next day you can bake this bread. You need 400g refreshed started, 150ml warmish water, 100g rye flour, 300g white spelt flour, 1 tablespoon of salt, 1 teaspoon honey. Mix everything for 6-10 minutes or until your dough will form a ball. Transfer your dough into a big bowl spread with oil. Cover and leave it for one hour to rise. After this time move your dough into a flat surface lightly floured and shape a loaf. Prepare a long tin, brush with butter and sprinkle with some oats on the bottom of the tin. Now transfer your dough into a tin, brush with olive oil, cover and leave to rise for couple of hours or longer. It should double in size. Next step is different. You put your bread into a cold oven. Now turn the oven to 200 degrees and bake your bread for 40-60 minutes. When oven will reach the temperature you can spray your oven inside with cold water to make a steam. When your loaf is nicely brown take it out from the oven and the tin and cool it down. I am enjoying it with Polish quark. I will share the recipe with you tomorrow. 01.01.2022 Herb quark is very popular in Poland. We love it for our breakfast. You can enjoy it with baked potatoes and well. You can buy a good quality quark in most deli in Melbourne. You can also use cottage cheese but quark taste better. You need 200-400g quark, 2-3 tablespoons full fat natural yoghurt, salt, pepper, fresh dill, fresh chive, tiny amount of red chilli, 1/4 of red capsicum, 1 clove garlic, radishes.... Put your quark into a bowl, add yogurt and using fork mix it well until you will get a smooth paste. Add all herbs and vegetables chopped finely, minced garlic. Now season well. You can also add 1/4 of white onion chopped finely. You can add some chopped radishes or slice them and serve on the top of bread with quark. Enjoy
