19.01.2022 A little bit of info about our authentic, highly digestible and super tasty pizzas! At Portico Pizza we make our pizza in the real Italian tradition way, with the same simple and genuine ingredients: Flour, water, salt, passion and lots of love ... Artisanal pizza We leave our dough improving at 4C for 48 hours in order to allow amino acids to develop and the flavour to grow. Once ready we stretch your pizza by hand, without any roller machine which would destroy all the nice little bubbles made by the good sourdough bacteria, but differently, every step is hand-made, just following the traditional methods passed down from one generation to another. Why sourdough? The sourdough bacteria pre-digests the flour, which releases the micronutrients. This process takes place over a long slow fermentation, which gives your pizza a superior taste and texture. The importance of a good flour... At Portico Pizza we use our special flour blend made with Australian flour and Petra 3 flour which is an high quality Italian flour, stoneground, and NON highly refined in order to keep some of the rye rich in fibre, minerals and vitamins. Studies have shown that rye flour added to sourdough can help regulate blood sugar levels which helps ward off diabetes. Buon appetito!
