15.01.2022 When you see a perfectly stacked tiered cake please take a moment to appreciate the workmanship of the artisan who has meticulously baked the even layers, found with endless trial & error the perfect buttercream to hold up these layers, stacked with an architectural precision these tiers, internally structured the tiers with an engineer’s accuracy so that the cake holds up during transport and then sculpted the sides tops and edges with the hand skill of a surgeon to produce ...what looks like a near perfect structure. I don’t use tools of measurement or secret shortcuts to achieve this. It’s from my years of dedicated practice, trained hand eye coordination and my baker’s intuition (yes that is a skill set haha) which enables me to do what I do. I was not born with this ability - but have acquired it with the years and years of dedicated self training & practice. So to put it into perspective I saw a meme recently that put it quite perfectly...you’re not paying for the 30mins it took me to make the cake, you’re paying for the 10 years of my experience to make this cake in 30mins - you’re paying for the years, not the minutes..
