Im a big believer of letting the ingredients do the talking and I enjoy chatting with Elliot to help me find whats suitable from the fruits available. He understands that not all peaches, plums etc are suitable however delicious on their own, too sweet or too tart for what were after. Just like the secret behind our pork, the recipe begins from the hard work put in on the farm
