11.01.2022 Something nice and easy to try this weekend with your avos courtesy of chef @curtisstone INGREDIENTS 1/3 cup (80ml) crème fraîche or sour cream 2 tablespoons buttermilk... 2 tablespoons fresh lemon juice 1 1/2 tablespoons extra virgin olive oil, divided 1 spring onion, finely chopped 2 prosciutto slices, halved crossways 2 firm ripe Hass avocados, halved, stoned, peeled 30g baby rocket leaves 2 red radishes, shaved into rounds on a mandolin Lemon halves, to serve METHOD Step 1 Prepare a barbecue flat plate and grill for high heat. In a medium bowl, whisk the crème fraîche or sour cream, buttermilk, lemon juice, 1 tablespoon of the oil and the spring onion. Season the dressing to taste with salt and pepper. Step 2 Add prosciutto to the flat plate and cook for 1 min each side or until crisp. Set the prosciutto aside on a piece of paper towel to drain any excess fat. Step 3 Brush avocado halves with remaining 1/2 tablespoon of oil. Season with salt. Place, cut-side down, on the barbecue grill. Cook for 1 mins or until char marks form. Using a thin metal spatula, carefully turn avocado over and cook for a further 1 1/2 mins or until warmed through. Set the avocados aside briefly. Step 4 Divide rocket and radish among serving plates. Top with avocado halves and fill with some of the dressing. Drizzle more dressing around salads.
