21.01.2022 Try this healthy muffin recipe as a more nutritious alternative for when you’re craving something sweet Directions: 1. Preheat oven to 180 degrees and line a 12-cup muffin tray with paper cases. 2. In a larger bowl, whisk the eggs, maple syrup and vanilla extract together until well-combined. Stir in the mashed bananas and milk.... 3. In a seperate bowl, combine the rolled oats, wholemeal flour, baking soda, cinnamon and walnuts, if using. 4. Add the banana mixture to the dry ingredients and mix with a wooden spoon, until just combined. 5. Divide the batter evenly between the 12 cases. 6. Bake the muffins for 15-20 minutes, or until a skewer inserted into the middle of the muffin comes out clean. 7. Leave the muffins to cool for 5 minutes in the muffin pan. Feel free to give it a go and let me know how it turns out Directions: 1. Add frozen berries and banana to a blender and blend on low until small bits remain. 2. Add a bit of coconut or almond milk and protein powder (optional), and blend on low again, scraping down sides as needed, until the mixture reaches a soft serve consistenc...y. 3. Scoop into 1-2 serving bowls and top with desired toppings. 4. Best when fresh, though leftovers can stay in freezer for 1-2 weeks. Leave to thaw before enjoying!
