24.01.2022 ! Yarra Valley first harvest Salmon Caviar infused in Four Pillars Bloody Shiraz Gin!... Yarra Valley’s First Harvest Salmon Caviar celebrates the first spawning ever of our young female Salmon. The result is a softer more palatable pearl that melts in your mouth and accentuates the taste buds with a crisp salty burst of flavour. Yarra Valley Caviar’s more recently added Brook Trout caviar, has a rich golden colour and a creamier more delicate flavour, which is softer on the palate. The golden caviar is an interesting addition to the caviar range, and differs in texture and taste, melting, rather than bursting in your mouth. These glistening blue bubbles, referred to by fans as ‘sapphires of the ocean’ are the roe of wild Shark Bay Scampi. The eggs are firm, but readily pop in your mouth. There isn’t the crunch that comes with lumpfish caviar, but it also doesn’t melt on your tongue like sturgeon. I find the wild scampi caviar comes somewhere in between. It has a fresh rich salty flavour. Not as creamy as sturgeon, but still with a lovely depth of flavour. A light fishy taste, more like ocean with a waft of fish swimming past. Which is understandable as the roe is kept outside of the body and is surrounded by sea water. Compared to the luxurious Sturgeon Caviar, Scampi Roe has a lower fat content and therefore is not considered creamy in texture, but its firm texture can create a satisfying pop in the mouth. The season runs from November to March, with scampi hand-harvested from waters around 500 metres deep off Australia's west coast, mainly around Port Hedland. Their roe is then hand-sorted and tinned with no additives or colourings other than salt. The scampi keeps its egg sacs outside its body, so the flavour of the ocean permeates the naturally blue eggs. All while stocks last!
