12.01.2022 In the last months I have been working with Zac from Alderton’s Farming who has taken up the challenge of producing organic meat chickens in WA. There is no other organic meat chicken producer in WA and there is also no certified organic chicken abattoir. At the moment the birds are being killed at Wagin Duck and Game and Zac is present during the whole time of slaughter and from there returning with the chickens to his own processing facility in Albany to cut and pack the ...chickens. Processing day is always a long day for Zac. Zac has chosen the heritage chicken Sommerlad as the breed he will be producing. The Sommerlad have great genetic diversity and are hardy and resilient to Australian conditions. These birds have much harder bones than conventional chicken bones. They also have thick skin and tasty fat which is under the skin and through the meat, making the meat much more flavoursome and juicy. If you have never eaten a Sommerlad chicken before it will be a new experience. You will notice the more yellowy skin, the fat and meat colour. Over the last months Zac has been working on producing his own certified feed locally and has managed to have 80% made out of local produce. This is an amazing achievement as certified organic chicken feed is one of the biggest hurdles here in WA. The mixture is certified organic feed free from GMO and soy and 80% WA!!! In the coming months Zac will setup his own Chicken abattoir and will then have all basis covered to have a fully certified product. Until then it will be organically produced.
