25.01.2022 To celebrate our grand re-re opening Prospect House Dining Room is putting together a 4 course menu featuring the very best (and most popular) dishes from our recent delivered-dining menu. The only catch is this time you have to come to us! The menu will include four courses and amuse bouche for $90pp. Matched wines is also an option at $60pp. For all guests that book we will include a glass of Tasmanian sparkling on arrival with compliments.... Bookings are for Friday the 3rd of July or Saturday the 4th of July. Space is limited to just 22 guests on each evening. To book today email [email protected] and leave your name, requested number of guests, preferred booking time (between 6pm and 7.30pm) and dietary requirements. Accommodation also available for those that like the idea of walking back to bed at the end of the evening, and a hot cooked breakfast the following morning :). 24.01.2022 Stories, tales and titbits from Prospect House volume #3: A winding tree... We have hundreds of trees on property at Prospect but none more interesting than this very old specimen of Myoporum Laetum, otherwise known as Mousehole Tree! This tree in particular is native to New Zealand and as our arborist suggested very rare in Tasmania. Can you guess why it's called Mousehole Tree? There isn't much of a story here, we just love this tree!

24.01.2022 In what we expect to become a Richmond tradition, our October afternoon tea is now booking up fast. If you can not make it in October keep the last Sunday of each month free for an afternoon in the country! call today to reserve your table 6205 9740.

21.01.2022 This weeks recipe share is of our in-house gluten free granola - normally reserved for our exclusive staying guests ;). It's a healthy-ish (!) way to start your day, and a fun recipe to make at home. Mix together 150g slithered almonds 80g whole almonds... 90g linseed 120g sunflower seed 200g pepitas 90g hemp seeds 90g sesame seeds 100g shaved coconut Add: 2 tsp ground cinnamon 1 tsp sea salt 150g honey (leatherwood if available) 40g coconut oil Stir honey mixture through nut mix to evenly coat. Bake at 160 Celsius for approximately 40 minutes until dark golden on a lined baking tray, check & stir every 8-10 minutes. Stir several times as the mixture is cooling. Once completely cold add 160g of your favourite dried fruits. (we use goji berries, dates & dehydrated strawberries) Store in an airtight container. Happy baking :)

Whilst celebrating their 10th wedding anniversary Stuart and Tamara found a bit of time to whip together some premium video content of Tamara preparing one of our menus from a few weeks back. We just love that the video is absolutely incredible, and Stuart you still manage to get a shot of Tamara in her ugg boots ;). This is exactly what we hoped for when we started the deliveries. Premium food, premium s...etting, celebrating something special with a loved one, and all without any compromise to isolation comfort. We do hope Tamara that with all your work he did at least do the dishes ;). We should mentioned second prize is for a three course dinner for two at Prospect House and arrival sparkling valued at more than $200. We also have a couple of third prizes to hand out which we will deliver this weekend . This weeks menu will also be posted in the coming hour.

18.01.2022 Is that a gate opening or a gate closing? Well... it's both! We are sad to say that last week was our final week of our delivered dining menu. The menu itself ran for 8-weeks and has provided our team and our guests with a whole lot of enjoyment and plenty to celebrate. So as one door closes, yet another opens... Our restaurant and accommodation will reopen from July 2 and is now available for bookings both online or via email at [email protected]. We do have an exciting country-winter escape to announce in the coming days that will combine the north and south of our state... Stay tuned.

We might not get to see you but were pleased to announce the band is still playing! 16.01.2022 Stories and tales from the Prospect House vault volume #4...social distancing or segregation? We have two beautiful marble stone fireplace's at Prospect House located in each of the two front rooms of the main home. The rooms are nowadays the lounge and restaurant however they were once used quite differently. The house was built in 1830 and the black fireplace room was the formal dining space where father Buscombe may have eaten and where the household would have entertained... on special occasion - the children would have dined in the informal dining space (now my office!). The pink/purple fireplace room was the ladies drawing room - or in times gone by known as the 'withdrawing room'. At the end of a meal the women may have 'withdrawn' to the drawing room whilst the men stayed in the dining room for a port or a smoke. We're proud to say no such segregation exists here now and if you want to have a smoke - you can go out to the paddock! But we'll gladly still serve you a port, whatever your gender and in whichever room you choose!

16.01.2022 Our history booklet has finally arrived and is looking fantastic! A big thank you to Pen Tayler and everyone involved in bringing this together. We are excited now to share with our guests and local history buffs alike. Prospect House will be operational and available for both accommodation and restaurant dining from July 2 this year We have decided to stagger our reopening, and our availability and restaurant opening times will grow as the year goes on. From July 2 we will be open for accommodation arrivals Thursday - Sunday. Our restaurant will be open to accommodation guests and local diners Friday & Saturday, with a lighter menu offered on the other nig...hts for accommodation guests. From September we will look to grow the offering and again in December. We have also started taking wedding and group enquiries for accommodation and dining 7-days. If you haven't seen the property since it's 2019 restoration this is a wonderful opportunity to view the 190 year old heritage home and gardens, not to mention a nice way to spend a winter Sunday in Tasmania :)

What a wonderful way to help keep businesses alive during periods of closure. Without any revenue generation many businesses will be fearful of whether they can even get to the point of re-opening. 14.01.2022 History and tales from the Prospect House story book... #3 - Cellar Dwellers... The cellar might nowadays play host to more than 100 different wines from around Tasmania and abroad, however the cellar has played role to a much less extravagant past. In the 1820's the cellar was "home" to more than 18 convicts who helped build Prospect House and it's outbuildings. The cellar is 4 x 8, had a dirt floor which would become a mud-pit with any rainfall, and a small barred air-vent ...to allow that cold winter air in. The original boiler and fire-place at least suggests that the convicts were able to cook and keep there quarters warm. In the 1980's the cellar was used by chef Graeme Phillips to dry age game meats. Everything from hare, rabbit, pheasant, duck and venison. We don't think the convicts had access to such gourmet product...

12.01.2022 Winter is coming, so if you don't have all your pickling done for the cooler months ahead - don't fret! This week chef Kurstin is sharing with you her base pickling mix that can be used on a variety of Autumn and Winter vegetables or proteins. Ingredients: 700g castor sugar 850ml white vinegar... 24 pepper corns 12 cloves 6 dried or 3 fresh bay leaves Combine all ingredient in a pot and simmer until sugar has dissolved, leave to stand for flavour to infuse. Store remaining pickle mix in an airtight container in the pantry for up to 12 months. Happy pickling and stay warm everyone.

12.01.2022 We missed sharing one of Kurstin's recipes last week, so in an effort to redeem our tardiness here's a recipe we're sure will keep the bakers in business! Prospect House 'House Made Butter' Makes 250gm... 250gm Sour Cream 250gm Cream 250gm Iced water 1 tsp Sea salt Blend cream and sour cream in a food processor for 10 minutes.The whey will separate from the fat. Drain off and save buttermilk. Put solids and iced water back into food processor and blitz for 2 minutes. Strain any excess liquid off. Add salt and shape. Reserved buttermilk can be saved for baking scones, bread etc. in place of milk or water. Happy baking :)

This is the first week we have featured the Pooley Wines Riesling. We will be packaging the 18' vintage, but who knows we might sneak a 19' in here and there . We will be posting the winner of our dining 'in' competition next week. This is the final week to get your photos in and be eligible. The competition is wide open and again, who knows, we might throw a second and third prize into the mix!

08.01.2022 Historical titbits from Prospect House volume #5. Prospect has a long history of service from it's very early days in the 1800's through to the service our staff give today as a refined hotel stay in Tasmania's countryside. Today's photo is of the original bread oven in the servants quarters that was used to bake daily for the Buscombe family. Although we like that the invention of electricity has made our lives easier today, we still love that the original oven has been kep...t and preserved at the property to highlight it's rich heritage. We hope to get the oven up and running again for the first time in many years in time for our July winter reopening.

07.01.2022 Tomorrow we will launch Head Chef Kurstin's new summer menus - both for brunch and dinner! Have you booked your table yet? We will say good-bye to the popular, wobbly-ful, rosewater panna cotta with cardamom and cinnamon scented kindred organic quinoa, but you can have a knack at making it yourself at home (full recipe below). 800ml single cream... 150ml milk 50ml rosewater 50g castor sugar 4 leaves gelatine (gold) - Place cream, milk & sugar in saucepan & bring to a gentle simmer, stir & simmer until sugar has dissolved, flavour with rose water. Separate gelatine leaves & soak in cold water for 5 minutes. - Squeeze excess water from leaves, place into a bowl or jug large enough to hold cream mixture, pour cream mixture over softened gelatine & stir well to ensure all gelatine has dissolved. - Pour mixture into a metal bowl & gently place over another bowl filled with ice, stir mixture periodically until it becomes a thin custard consistency, pour into moulds cover & refrigerate preferably over night to allow to completely set. - When removing panna cotta from its mould ensure you have your presentation plates ready as it is difficult to move the panna cotta once you have turned out of the mould. If using a plastic dariole mould gently squeeze the mould & break the seal of the edge of the panna cotta with a small palette knife or your finger, turn upside down & allow to gently fall out of the mould onto the plate. Happy making!
