Thats a big deal, heres why: Girma Bekelle is a small-holder producer living in Kochere, a town in Yirgachefe, Ethiopia! Normally he would have to sell his coffee as a 'regional' lot due to Ethiopian Government Law. Well, laws change and now we can buy it directly from him. Meaning Ethiopian coffees can now be traceable to farms and farmers. Farmers can now have an innovative approach to their crop and how they process the coffee. Exciting times to see the full potential of Ethiopian coffee unlocked. Sip and see what the fuss is all about with our latest drop LUDICROUS.

21.01.2022 PRE-SALE NOW AVAILABLE: The La Miel farm is located directly across the road from the coffee research and processing facility (named Casa Blanca)! This is where our Green Coffee Buyers, Mike, and Nile completed their coffee processing course earlier this year (Q Processing). The owner of Casa Blanca, and Colors of Nature, Felipe Ospina, is exceptionally knowledgable when it comes to processing coffee. He studied microbiology in university, completing his masters project on fi...nding new strains of antibiotics in kelp! Felipe is only one of several Q processing instructors worldwide and so far has taught across Central and South America, Japan, China, and Taiwan! The La Miel Geisha was processed at Casa Blanca under the guidance of Felipe. One of the keys to its quality is Felipe's 'naturals house', a special shaded area for the controlled drying of natural and honey processed coffees. Rice husks are laid under the floor which absorb heat during the day and release it at night drying the coffee more evenly. The house also has plastic sheet walls allowing its temperature to be regulated during the day.

13.01.2022 Ever wanted to make your v60 at home like we do here at Aunty Pegs? Let us know how you go! Equipment you need: 15g of amazing coffee ground to a medium coarseness... Gooseneck kettle - really important for having amazing control of the water as you pour Hario V60 cone and filter paper Bamboo paddle Scales Timer We have a super simple and easy to replicate recipe and method. The only variable we like to change is the grind size, everything else is constant across every coffee we have on the AP Bar. 15g of coffee to 250ml water (at or just off of the boil) - 1:17 ratio Rinse the filter paper which preheats the brewing vessel at the same time (don't forget to empty the rinse water out!!) Put the coffee into the V60 and give it a tiny shake to flatten the top of the bed Start the timer and pour 50ml of water into the bed of coffee and agitate a couple of times front to back, and left to right, then let it sit and degas for 30s At 30s, slowly and steadily pour the remaining 200ml of water in circles and aim to finish pouring at 50s - a constant and controlled flow rate is the aim! Give the whole cone a gentle swirl, helps catch any coffee grinds left high and dry Coffee should finish running between 2:30 and 3:00, depending on the bean you're using. See more

08.01.2022 Girma Bekele is a motivated coffee producer. He is one of the few in his area who pre-float their coffee cherries ensuring that only the ripest and sweetest ones end up in your final cup. This specific lot is a blend of the Walisho, Dega, and Kurume varieties, selected specifically by Girma for their productivity and superior cup quality. Due to the Ethiopian government changing laws around who can export coffee this is the first year we have been able to buy a fully traceable lot from a small-holder producer. It is very exciting to be able to directly support passionate producers, like Girma, who go above and beyond.
