23.01.2022 Monty. Our maremma sheepdog who loves his walks around the truffiere paddock every day, checking the boundaries and keeping alert for any threats. This is Monty meeting the friendly neighbours for the first time....cows in the next paddock. Even at 5 months old, all of his guardian instincts kicked in. He really didn't know what to make of these large strange sounding creatures. ... But as each photo's commentary goes, he finally determined that they were friends and not foes, and the fence looked pretty secure to him. Ahhh Monty, we love you and can't wait to see you mature into your role as Chief Security Officer of Provenance Truffles.

18.01.2022 Today's new arrivals. Helping out our local community by providing a temporary home for some horses, until the racing industry is back up and running. They took one look at the lush green grass and thought -yum, nom, nom, nom.

11.01.2022 Not truffles, but what a lot of fungi we see around the farm. You can never to too careful if they are toxic or not. So we just leave them there, doing their thing, in the paddocks.

10.01.2022 So the landscaping of our front yard block continues. So much time and effort has gone into making our new house a home. Thank goodness we found great local tradespeople who turned our dream of a beautiful entrance into a reality. It's been a great learning curve and useful to know the tricks of the trade for when we start building the formal garden area for our visitors to the truffiere.



08.01.2022 Thank you for joining us on the progress of moving from Canberra to Winkleigh Tasmania and our dream of setting up a working truffiere. This month was to be the start of Provenance Truffles. Irrigation was going in first and then the trees next month. Sadly, the COVID-19 virus has put our plans on hold for a little while and we will start again in spring to plant out our saplings, growing strong in the nursery in Victoria. In the meantime, the extra time will help raise our ...PH soil levels even more and allow more time for us to get the preparation right. Wade and Ardathia did welcome a new family member - Monty the Maremma. He's 8 weeks old and will be our farm dog; keeping our boundaries, chickens and future livestock safe from predators. Hoping you can come on our journey; experience the highs and lows with us on our path to becoming one of Tasmania's premier agri-tourism destinations.

01.01.2022 Frosty mornings here in Winkleigh Tasmania. Perfect truffle weather; with these cold snaps allowing the truffles to ripen. This season will be a good one for truffle farmers across the country, I suspect. The days then become gloriously sunny without so much of a breeze. ... Loving the winter here.
