There is a misconception that we have to push ourselves harder so that we can get more out of life.... There is a misconception that we have to point out what others are doing incorrectly instead of saying well done. Heck, if we don’t say no to things, we are viewed as pushovers. But what if it is actually the exact opposite? What if kindness is a strength, not a weakness? In all reality, kindness is a strength and negativity is the real weakness. Do me a favour right now. Think back on the last time that you went out of your way to do something nice for someone else. Maybe you held the door open, bought someone else dinner, or even told someone that they looked nice. Now, think back on the last time that you criticised someone, told them to f off, or thought of yourself as more valuable. 20.01.2022 #repost @kesarskitchen PRAWN SKEWERS Why not whip up these prawn skewers this evening - they can just as easily be cooked under a grill and are always guaranteed to go down a treat! Super easy to make - I’ve marinated the prawns in two different mixes.... 500g raw king prawns, peeled 6 garlic cloves, crushed 2 long red chillis, finely chopped 4 tbsp olive oil Juice 1/2 lemon 1 tsp paprika 1/2 tsp chilli flakes Salt & pepper 2 bell peppers, chopped into 2cm pieces 2-3 small red onion, cut into 1/8 chunks Handful of mushrooms, quartered 1 Lemon-based - place half the crushed garlic, half chopped red chilli, 2tbsp olive oil, lemon juice, salt & pepper into a large bowl. Combine well. Add 250g of the prawns and toss to coat evenly. Cover and refrigerate overnight 2 Paprika-based - place the other half of the crushed garlic and chopped red chilli, paprika, 2 tbsp olive oil, chilli flakes, salt & pepper into a large bowl. Combine well. Add the prawns and toss to coat evenly. Cover and refrigerate overnight 3 Soak the bamboo skewers in cold water for a couple of hours to prevent them from burning under the grill 4 Remove the prawns from the marinade and thread them and the chopped vegetables onto the skewers 5 Place these skewers on a baking tray lined with foil. Place under the grill on a medium heat and cook for 5-7 minutes, turning over once halfway through. 6 Place the prawn skewers on a serving plate. As a horse rider myself, I know what it takes to be "Fit to Ride". Fitness for riding is becoming more and more popular. But for those who’d rather grab another glass of chardy than walk into a gym (you know who you are!) and whose world of fitness has only ever been jumping on the back of their horse, there’s no need to give... up on the concept just yet. Becoming fit for your sport should be part of riding, whether you are competing or not, if for no other reason than you are getting on the back of an animal and expecting it to carry you. The least you can do, as one half of a partnership, is hold up your part of the bargain. You should become the easiest load possible for your horse to carry. Pan Seared Salmon with Creamy Garlic Dijon Sauce Pan seared salmon is perfectly delicious on it's own but when you add a bright dijon sauce like this it takes it to a whole new level! By @cookingclassy... 4 (6 - 7 oz) skinless salmon fillets 3 tsp olive oil Salt and freshly ground black pepper 3 garlic cloves, minced (1 Tbsp) 1/2 tsp cornstarch 1/2 cup heavy cream 1 1/2 Tbsp dijon mustard 1/2 tsp honey 1/2 cup chicken broth/stock 1 Tbsp minced fresh dill Heat a large non-stick skillets over medium-high heat (or use two skillets if you used large fillets like I did so they aren't overcrowded). Add 1 1/2 tsp olive oil to each skillet. Dab both sides of salmon dry with paper towels and season both sides with salt and pepper. Place salmon in skillet (top of salmon turned down). Let sear until golden brown on bottom, about 4 minutes then flip and continue to cook to desired doneness, about 2 - 3 minutes longer. Meanwhile, in a liquid measuring cup whisk together cornstarch with 1 tbsp cream, then mix in enough cream to measure 1/2 cup. Whisk in dijon mustard and honey. Remove salmon from skillet and transfer to a plate, leaving oil in one skillet. Tent salmon with foil. Add garlic to skillet with oil set over medium heat, saute until just barely golden brown, about 20 - 30 seconds. Pour in chicken broth. Bring to a simmer then reduce heat to medium-low and let simmer until reduced by about 2/3, about 3 minutes. Whisk cream mixture once more then pour into skillet. Cook and stir, bringing to a simmer. Let simmer gently, while stirring, for about 30 seconds. Remove from heat stir in dill, return salmon fillets to pan, spoon sauce over salmon. 10.01.2022 It's still cool enough in the evenings for a good hearty soup! #repost @chefpeteevans CHICKEN AND VEGETABLE COMFORT SOUP, from our cookbook ‘One Pot Favourites’... 2 tablespoons coconut oil or good-quality animal fat 1 onion, chopped 3 garlic cloves, finely chopped 1 large carrot, chopped 1 celery stalk, halved lengthways and cut into 1 cm thick slices 4 thyme sprigs 1 bay leaf 1.75 litres (7 cups) Chicken Bone Broth, plus extra if needed 1 tablespoon finely grated ginger 1 zucchini, cut into 2 cm cubes 500 g kent pumpkin, cut into 2 cm cubes 450 g shredded poached chicken 200 g silverbeet, shredded sea salt and freshly ground black pepper 1 handful of flat-leaf parsley leaves, finely chopped Melt the oil or fat in a stockpot over medium heat. Add the onion, garlic, carrot, celery, thyme and bay leaf. Cook, stirring occasionally, for 6 minutes until the vegetables are soft but not browned. Pour the broth into the pot and bring to the boil, then reduce the heat to low and simmer for 20 minutes. Add the ginger, zucchini and pumpkin to the pot and cook for a further 15 minutes until the pumpkin is tender. Add the chicken and silverbeet and simmer for another few minutes until the silverbeet is cooked. Season the soup with salt and pepper and sprinkle on the parsley before serving.
