23.01.2022 It really upsets me when people say eating healthy is expensive, it's totally not if you open your mind to trying different foods and visiting a farmers market or fruit and veg shop and spending the time to meal prep. Give my curry pumpkin soup a spin and you won't be disappointed! Curry Pumpkin Soup... Organic Whole pumpkin -$5 2 x Organic Lentils - (1.50 x 2) $3 Organic Chicken Stock $2.50 Garlic, Tumeric, Onion Flakes, Salt, Pepper, Curry Powder - $1 if that for this recipe. Made 7 big servings - $1.64 a portion (even cheaper per serve if you don't use organic, I only use organic for this as the market stall I get it from is all organic) Roast pumpkin whole wrapped in foil. 2-3hrs depending on the size. Caution: once cooked there is a fair bit of pumpkin juices, that are super hot. Let cool til you can pull apart and seperate the pumpkin. Chuck in a pot with all your spices to taste, lentils and stir for 2-3 mins to get the flavour through. Pour in 1 litre of your stock. Let simmer for 30mins. Depending on how big the pumpkin is you may need more or less stock. I serve mine with a dollap of natural yoghurt and lime juice!

09.01.2022 Meal Prep 1: Veggie Quiche Roast pumpkin Sauté onions Chop into cubes- Tomato and Feta... Combine in one bowl with handfuls of spinach. Spread mix in your baking dish. Egg Mix : 14 eggs Garlic Coconut aminos Paprika Salt and Pepper Tumeric Dash of milk of your choice Mix well and pour into baking dish. This mix made me one large dish and one small dish, in total 12 pieces for my meals. Bake at 180 for 40mins ( this will depend how deep your dishes are)
