11.01.2022 Recipe time! Time for another fancy Mortadella creation; Mortadella Bignè These mortadella puffs are a delicious, yet decorative puff with pistachio grains. To speed up the preparation you can buy ready-made puffs from the trusted pastry chef.... Ingredients : For the mortadella mousse: for approx 60 puffs. 600g cubed mortadella 250 g ricotta 250 g mascarpone 50g grated parmesan Salt To garnish: Olive Oil Pistachio grains Process: In the mixer put the mortadella and mix, combine the ricotta, mascarpone, parmesan and mix, adjust salt and mix until the mixture is homogeneous and creamy. Put in the fridge, in a pastry bag with a star vent, to rest for at least 2 hours.
