03.01.2022 It's been a while since I've made Mexican food and created this Naked Raw Burrito - super yummy and a real nutrition powerhouse! Recipe below: Sunflower seed 'meat' - 1 cup sunflowers, soaked - 1/4 onion... - 6 sundried tomatoes - 1/4 cup water - 1 tbsp olive oil - 1/2 tbsp chilli powder - 1/2 tbsp paprika - 1/2 tbsp cumin - Fresh chilli to taste (optional) - Salt to taste Combine all ingredients in a food processor (leave bit crumbled) and dehydrate in a dehydrator or in an oven in low temperature for 30mins. Can also be served as is. Tomato-Mango Salsa - 2 tomatoes - 1/2 mango - 2 tbsp red onion - 1 tbsp lemon juice - Fresh chilli to taste (optional) - Salt to taste Pulse all ingredients in a blender until combined. Guacamole - 1 large avocado (or 2 small) - 2 tbsp red onion, diced - 2 tbsp coriander, diced - 1/2 lime juice - Salt and pepper to taste Smash the avocado with a fork and add the rest of ingredients. Mix well. Serve with fresh lettuce, capsicum, cucumbers and some extra tomatoes and mango pieces. Enjoy!
