13.01.2022 Vegan taquitos recipe by #elavegan has been a favourite in my house for a few months, and now 9month old loves the filling (I just take some out before I give it the extra cayenne pepper touch). 11.01.2022 Healthy spinach GF /vegan tortillas with zucchini fritters quesadilla style Tortilla recipe so easy by @elavegan Key is to use a good non-stick pan... Ingredients: 1 cup chickpea flour 1/2 cup cornflour 60g baby spinach (note I used half and half kale/ spinach) 1- 1 1/8 cup water Pinch salt Method: 1. combine all ingredients in a nutribullet and blend until combined. 2. Poor into a non stick pan and cook for 2 minutes on low-med heat. Flip and cook for a further minute. 3. Ingredients: 4 King Oyster Mushrooms 2 Tablespoons extra virgin olive oil 1 Teaspoon smoked paprika 1/4 teaspoon salt 1/4 teaspoon cayenne pepper 2 cloves garlic 1/4 cup BBQ sauce Method 1. Shred king oyster mushrooms using a fork. 2. Combine oil, garlic, salt, pepper and paprika then toss in mushrooms to cover 3. Place on a baking tray and bake in oven (180C) for 20 minutes 4. 04.01.2022 Vegan and gluten free Mexican bean mix Ingredients 1 Onion, diced 500g mushrooms, chopped ... 2 carrots, diced 1 capsicum, diced 1 x tinned corn 400g 2 x tins beans (I used red kidney and cannellini) 3 cloves garlic crushed Spice mix (1 Tablespoon ground cumin, 2 teaspoons onion powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon dried oregano, 1/2 teaspoon salt) 1/2 cup veggie stock 2 teaspoons cornflour 1 Tablespoon vegan Worcestershire sauce Serve on corn chips, taco shells, or wraps and top with favorite Mexican toppings Method 1. Cook onion in 1 T vegetable oil and a little salt and cook for about 5 minutes on low-Medium heat. 2. Add in mushrooms, carrot, capsicum and cook for approximately 10 minutes until cooked 3. Add in spice mix heating until fragrant, add in stock, Worcestershire and cornflour 4. Add in corn and beans and stir until heated through 5. Add salt and pepper to taste (adding chilli or cayenne pepper if you like a bit of heat- standard spices make a mild family friendly mix). 02.01.2022 Pesto pasta (gluten free and vegan) It was one of those nights where I needed to make something from the ingredients in the fridge and cupboard...tonight magic happened Ingredients: ... 1 head broccoli 1 large bunch basil Juice of two lemons 1/3 to 1/2 Cup olive oil 4 cloves garlic Salt and pepper 1/2 cup nuts of choice (I had walnuts and cashews so did a blend). Method: 1. Place all ingredients in the blender and blend until the desired texture achieved...add more lemon juice/olive oil/ salt and pepper to taste 2. Cook pasta, set aside 3. Heat through pesto in a non stick pan, add pasta and stir through 4. Serve with a parsley or basil garnish Note you can blanch broccoli first before blending. 02.01.2022 Sticky sesame cauliflower by @veggiepeggy simply delicious! Cauliflower: 1 large head cauliflower... cups oat flour (or regular flour/GF flour) cup arrowroot (or corn starch) teaspoon sea salt teaspoon onion powder 1 tsp garlic powder cup unsweetened non-dairy milk+ two teaspoons apple cider vinegar (mixed) Sesame sauce: 1 tbsp toasted sesame oil 1 tbsp olive oil 4 cloves garlic, minced 1 tsp fresh ginger grated cup maple syrup cup low sodium soy sauce 1 tbsp rice vinegar 1 tsp chili garlic sauce (or sriracha) tbsp arrowroot starch 1 tbsp cold water Method: 1. Preheat the oven to 425F. In a large bowl, whisk together the flour, arrowroot starch, garlic powder, onion powder, salt and non-dairy milk/ACV. Be sure to mix until no clumps remain and it looks like batter. 2. Add the cauliflower florets into the bowl and thoroughly mix to coat all of the pieces. 3. Transfer to a baking sheet lined with parchment paper and bake for 30 minutes. 4. To prepare the sauce: In a bowl, whisk in the sesame oil, grated ginger, maple syrup, soy sauce, rice vinegar and chili garlic sauce (or sriracha) then set aside 5. Add minced garlic to a saute pan with olive oil. Saute until lightly golden brown. Add prepared sauce into pan and let simmer over low heat. 6. In a small bowl, whisk together the arrowroot powder and cold water. Pour into the pot with the sauce. Let simmer over low heat until thick, whisking occasionally to prevent any clumps from forming. Once it thickens, remove from heat. 7. When the cauliflower is done, let cool for about 5 minutes and then coat with the sauce. Once coated add cauliflower back into baking sheet with lined parchment paper and put back in the oven for 5 minutes to crisp up.
