Micro herbs and leafs can have a bit of a bad wrap in the eyes of some people, both in the industry and out, as they are mostly just thrown on a plate to make it look more "attractive" without any thought into flavour pairing, which in turn they become over used and unnecessary on a plate, for the sake of just adding some colour. Most micro herbs dont have a lot of fl...avour and all taste the same or just dont have a prominent flavour. When you receive top quality herbs like we get from @closedloopfarm you want them to be used as an ingredient, with thought behind why they are on the plate. Accentuating the dish itself. Not only do these herbs and greens look fantastic aswell as taste great from @closedloopfarm but they are grown and sold in a way that is zero waste! Next time you see some herbs, leafs or flowers on a plate at a restaurant, don't just push them to the side and eat around them thinking they are just a garnish, they may be there to compliment the dish, and you may not get the full experience of the food without trying it.
