20.01.2022 Today, 16 MAY 2020, is International Coeliac Day; and as a very proud Ambassador for Coeliac Australia I thought it would be lovely to start the day with a Beau...tiful Brunch. Gluten Free Pancakes topped with Gingered Apricots Makes 8 Pancakes (Serves 4) 1 cup GF self raiosing flour (I used Well&Good) 1 tsp. baking powder 1.25 cups almond milk 1 egg In a bowl place the flour and baking powder and a pinch of salt. With a fork, whisk to combine. In a separate bowl / jug, whisk the almond milk and egg until bubbles appear. Pour the wet ingredients into the dry and mix to combine. The mixture will be thick and creamy, and may still have lumps (that's fine). Into a non-stick pan (lightly brushed with butter) and over a medium heat place 2 or 3 rounds of batter. Cook for 3 minutes or until lightly golden on the underside, with bubbles on the upside. Cook for another 2-3 minutes or until done. MEANWHILE: In a saucepan place a 400g can apricot halves and 1 tbsp. ginger. Bring to a gentle boil, lower heat and simmer to reduce to a nice syrup. 13.01.2022 Kilcoy Branch held their Annual Meeting today in their lovely hall. Our office bearers for 2020/2021 are President "vacant" hopefully this position will be filled soon. Secretary Christine Rolph, Treasurer Nicky Lambourne, Vice Presidents Caryl Cook, Debbie Carseldine and Pam Robertson. International Officer E. May Boyd. Hostel Convener Caryl Cook. Caryl has completed her 4 year term as President and is looking forward to having a break, but will still be very much involved ...in this branch. Our meeting today was chaired by Greater Brisbane Divisional President Mrs Sue Baillie. As was to be expected members followed the safe distancing with the Covid 19. After our meeting members enjoyed a lovely lunch in the warm dining room at the Kilcoy Exchange hotel or as the locals call it "The Bottom Pub". The meal was very enjoyable and the service was great. Our branch was formed on 24 September 1924. And we still hold the values of this wonderful Association. 03.01.2022 An email received from Greater Brisbane Divisional Office for QCWA. : Good evening Branch Presidents, after conferring with our Greater Brisbane Division Executive, it has been decided to cancel ALL activities within our Division for March, April and May 2020. After that time we will address the situation. Our main priority is the health and well being of our members and due to the current advice from our Prime Minister we need to be on top of the Virus which could aff...ect all of us in some way. We don't need to to be complacent regarding this major problem. Please call me if you have any issues and I will stay in contact with you all during the next two months.
