20.01.2022 Well, the sun is shining and feels particularly warm today! Let's hope that rain holds out so we can all enjoy a good day out. We're down at The Beer Shed today servong from 12pm. I cooked all night through the rain, so ya better come down!

20.01.2022 Good morning sunshines! The smoker has pumped out the goods for an epic weekend of beers & Q! We've got brisket, pork, lamb, sausage, with all the usual sides on offer today. Burgers, boxed meals, or even nachos. I'm talking over 100kg of smokey, meaty goodness!... Come on down for an early Fathers Day celebration, or even tomorrow... that's right! I've given up my own Fathers Day to celebrate with you lot! Those who have booked the $65 session are in for a treat tomorrow! See you there legends.

19.01.2022 With the long weekend about to start, there's no better way to welcome it, (along with the nice weather) than BBQ! One of my favourite things to grill are these Angus scotch steaks from Costco - surprisingly well marbled and priced extremely well for those interested. A 5 minute cook over charcoal on the Weber GA with Grill Grates, for a perfect medium rare!



18.01.2022 Korean Popcorn Chicken with Ginger/Sesame Slaw An absolute winner in our home, plus it's super easy to do! There's a great balance of spice from the sauce, with the coolness and tang from the slaw, as well as a mixture of textures. Give it a crack ... Start with about 4 chicken thighs. Fat & sinew removed, diced into 1.5cm pieces. In a medium bowl, combine 6 TBS of rice wine vinegar with 1 tsp each of salt and pepper, plus 8 tsp of ginger powder. Mix into a muddy slurry and put your chicken pieces in to brine and absorb that flavour. Refrigerate for about 4 to 6 hours. In this time, prepare the ginger and sesame slaw. Shred 1/4 each of red and green cabbage into a bowl, then add 2 grated carrots and a red capscium sliced thinly. Also rip off some fresh coriander, about half a bunch. Mix that all together in another bowl, wrap and refrigerate. To make the slaw dressing, whisk together 5 TBS rice wine vinegar, 4 TBS soy sauce, 3 TBS maple syrup, 2 cloves of garlic, 2 TBS of fresh grated ginger and 2 tsp sesame oil. Next is the sauce that pulls it all together. In a small pot, combine 12 TBS tomato sauce, 3 TBS chili paste, 2 TBS soy sauce, 4 TBS brown sugar, 4 TBS honey, 1 TBS sesame oil and 2 tsp minced garlic. Heat this up to a simmer then allow to cool. Fire up your deep fryer or a pot of vegetable oil on the stove. On a wide plate, add a cup of cornflour. Place about 10 pieces of chicken in the cornflour at a time, pressing and turning to cover. Drop them into the hot oil and watch them crisp up, 3 to 4 minutes! Remove to a paper towel lined tray, then repeat with the remaining chicken. While your last batch of chicken is cooking, heat up the sauce once again. Mix some of the dressing into the slaw ingredients until lightly coated. Serve the slaw with some steamed rice, topped with the chicken, then the sauce drizzled over the top. Top the chicken with shallots and sesame seeds... done!

14.01.2022 No catering this weekend, but having a belated birthday celebration with my family and friends! It's bloody cold, but this BBQ I built years ago is performing amazingly as always. We've got pork snags, black pudding, chorizo, marinated butterflied chicken, asado beef ribs, molleja (beef gland) and flank!... It's a meat lovers heaven right here... so good. Hope everyone else is staying warm and safe!



11.01.2022 ** Appreciation Post ** Another huge thank you to everyone who came and visited us in the Shire this weekend on Friday and Saturday. Not just this weekend, but everytime we set up. 12 months ago we started from humble beginnings; not really sure what to expect from the public, not sure if it would all work out, not sure on anything really.... Since then, we've tweaked, adjusted and become more consistent... over 4 tonnes of cooked meat will do that! It's incredibly humbling, (a feeling I never thought I would get from doing this), to have repeat customers who know us and us know them by name, who bring their family and friends, who share our posts, who constantly ask when we'll be back again for their meaty fix. Same with the crews who run the breweries. These guys are the ones I owe so much to, for giving us a chance when we were a no body, who now call us when others pull out, who recommend us for private functions and events. You're all amazing. Lastly, most importantly, my wonderful wife who keeps me upbeat and positive when I'm stressing out (which is every time), who makes sure our daughter is kept happy and safe when I'm busy cooking through the night and on the road, especially at the moment where she's about to pop with the our little future pitmaster. I'm incredibly lucky here. So, here's to another great 12 months. Hopefully Rona pisses off and we can all get back to normal and celebrate together. Hopefully as a society we become more humble, caring and supportive. So from the bottom of my brisket filled heart, thank you again for the love and support! Officially the end of this post

09.01.2022 Smoked tomato & mushroom sauce with confit garlic, smoked pork & beef meatballs! With a brisket finishing earlier than I thought (for pastrami) there was no way I was gonna let that heat go to waste!

For me, it's not about revenue, or exposure, but being able to share my passion and love for food with others, to get them to experience what all our hard efforts produce... so again, thank you....
