Delightfully hosted by our students who prepared starters of: Turkish Bread served with Dukkah and Olive Oil... Mustard and Cheese Turkish Bread Pumpkin Arancini Balls Moving on to the Main Course, which consisted of: Queensford Chicken Parmigiana - Breaded Chicken Breast, Sauce Bechamel & Provencal, Mozzarella, Chips & Salad Eggplant Parmigiana, Chips & Salad (Vegetarian option), and Madras Goat Curry South Australian Goat, Steamed Basmati Rice, Raita & Coriander And to end with a tasting of a sweet dessert: Eaton Mess Meringue, Cream, Strawberry Coulis & Mint, or White Chocolate Fool Salted Caramel Popcorn, Raspberry Coulis. 16.01.2022 It's #NAIDOC2020 week! This year the theme is Always Was, Always Will Be, which acknowledges that hundreds of Nations and our cultures covered this continent. Our Early Childhood Education and Care Department have joined in the great celebration event this year by inviting a guest speaker, John Barber, an Aboriginal Educator originally from Rockhampton, to speak to our students via virtual classroom for the teaching cluster of culture and community. We thank John for taking the time to speak to our child care students to further educate them on the history, culture and achievements of Aboriginal and Torres Strait Islander people.

08.01.2022 Winner of 2020 Lifetime Achiever from the Restaurant and Catering Association QLD, Jimmy Shu, visited our Brisbane Campus. It was an honour to meet Jimmy and we look forward to meeting paths with him in the future! A little bit about Jimmy Shu who is a chef, restauranteur and a passionate foodie based in Darwin, Northern Territory. Jimmy Shu grew up in Sri Lanka to Chinese parents. His father was a chef and spent much of his childhood in the kitchen. Wit...h tastes inspired by Jimmy’s childhood, Jimmy opened a restaurant in Darwin, Hanuman, a fusion of Thai, Nonya and Tamil cuisines. Hanuman won Jimmy his first chef’s hat in the 2018 Good Food Guide. Not only does Jimmy own a restaurant, but he has recently hosted an eight-part series that takes you on a culinary journey to multicultural melting pot of Australia's Northern Territory.
