15.01.2022 Happy New Year I survived my first year as a mum of two...just! Well, I'm excited to get back into the kitchen this year as I now have a little more time on my hands - yay!... Over a month ago, my husband and I decided that we will no longer buy meat to cook with (we still eat fish time to time) and focus more on vegetarian and also vegan meals for our family and so far we are loving it! I have a VEGAN veggie and bean chilli recipe I want to share with you soon but first, my epic tuna salad with a mustard dressing that I am currently obsessed with. I haven't had time to type up the recipe on my website so I'll write it down in the comments below Happy Friday X

I defrosted too many chicken drumsticks for chicken soup so with the leftovers I decided to bake some honey mustard chicken 6-8 chicken drumsticks, skin on 1/4 cup honey... 2 tsp mixed herbs 1 tbsp wholegrain seeded mustard 1 tsp mustard powder 1 tbsp olive oil salt and pepper Mix ingredients together and marinade chicken for a couple of hours or overnight. 09.01.2022 It's been a long time since I've posted a recipe! Being a mum of two and trying to find a balance with life in general is tricky que sleep deprived mumma These are Country Cottage Rolls. The first time I made these were at school in year 7 and I am pretty sure the whole batch was eaten before I got home (sorry mum) 1 cup cottage cheese 1 cup oats... 1 brown onion 1/2 cup walnuts 1/2 cup bread crumbs 1 tbsp soy sauce 3 eggs 3 sheets puff pastry Milk, to brush Sesame or poppy seeds Blitz all ingredients (except the pastry...duh) in a food processor. Divide mixture amongst pastry, cut to size and brush with milk and sprinkle with sesame or poppy seeds. Bake @ 200 for 15-20mins. Enjoy! X

05.01.2022 BREAKING NEWS!!! I have HATED egg sandwiches for a majority of my life, literally just the smell #vomit . Last time I ate an egg sandwich, would of been maybe 20+ years ago?! And still to this day, I need to remind my mum that I don't eat them..... BUT!!... I made my husband some egg sandwiches for lunch today using Hillgrove Farm Pastured Eggs with a litte mayo, curry powder, salt and pepper annnnndd I thought I might give it a go. I just ate half and I have to say, I didn't mind it and I'll probably eat the other half.
