08.01.2022 What's happening in the kitchen today? If you are lucky enough to have a lovely Greek neighbour who provides you with excess homegrown produce or have too many lemons on your tree have you ever thought of preserving them? My 1st taste of spiced preserved lemons was in Morocco in my 20s it was a deliciously intense flavour.... Given that travel is highly unlikely for a long while i have been reminiscent about travel and food . Cut your lemons into 1/4s still intact at the bottom, heavily salt the inside and place them into a sterilised jar, add another 4 tablespoons of salt ( Himalayan salt) to the container add 2 cinammon sticks and 1 tbls cloves and fill with water and add 2 tablespoons organic honey. Leave for around 3 weeks. Be sure to discard the flesh and use the rind only. Add to moroccan dishes, vegies, pasta etc. Looking forward to sharing a few favourite moroccan dishes in a few weeks time #fermentedfoods #moreprobiotics #guthealth #circulatorystimulant
