25.01.2022 Tasty Bowl Tuesday Here is the last curry I cooked during my curry festival. This one is Butter Chicken. I cheated as I did use a butter chicken sauce. But I made it my own by adding in some red capsicum and carrots, and using some olive oil instead of all ghee and butter.... I chopped onion - you can swap this for onion infused oil and added in With Red Capsicum and Olive oil, and saut until the onion starts to turn clear Next adding in the butter chicken mix I fried these spices until you can start to smell the curry fragrance. Then adding in chicken, tinned tomatoes and cooking for about 20mins I added in the coconut milk just before serving and topped with fresh coriander. Served with Brown Basmati rice and some roasted eggplant (next weeks Tasty Bowl) Show me your curries and casseroles. 25.01.2022 Tasty Bowl Tuesday Looking for a lighter meal that is full of taste? What about making some rice paper rolls. These are a great one to get the kids involved. INGREDIENTS... 6-8 Dry Rice Paper / sheets 1 x Breast Smoked Duck - cooked and cut into 1/2cm slices 1 cup cooked Vermicelli Mint leaves Basil leaves 1 cup dry Coleslaw mix Hoisin sauce to mine. METHOD * Prep all the ingredients first and have in bowls / plates on a table * Have a large bowl water - wider versus deep to put rice paper sheets into * Place have a damp clean tea towel on the table * Take a Rice Paper sheet and immerse briefly in the water - pull out and lay flat on the tea towel. * Place some Duck, Vermicelli, Coleslaw, Herbs and Sauce very tightly on ~ 1/3 of the sheet, being mindful not to over stuff. * Roll tightly, folding in the sides half way along * Place on a non-stick tray or baking paper * Keep covered in the fridge with a damp cloth until ready to serve You can use different meats or proteins in these rolls - chicken, fish, egg, tofu and other vegetables including slices carrots, cucumbers, capsicum These are a great and healthy light meal. 21.01.2022 Tasty Bowl Tuesday Here is another curry I cooked during my curry festival. This one is a Dhal. Its vegan and only took me about 20mins to put together.... Dhal is so easy, so good and so healthy.. I really should make it more often I chopped onion - you can swap this for onion infused oil and added in With Red capsicum and Olive oil, and saut until the onion starts to turn clear Next adding in Curry powder Cumin seeds - ground Coriander seeds ground Turmeric powder Cinnamon stick Small amount of chilli flakes Salt/ Pepper I fried these spices into the mix until you can start to smell the curry fragrance. Then adding in red lentils, tinned tomatoes and boiling water to create s soupy mix. Essentially then I cook for 60+mins, adding in some more boiling water if the mixture soaks up on the fluid, until the mix turns into a thick porridge like consistency Served with Brown Basmati rice Show me your curries and casseroles. In the early 2000, Monash University researchers, developed the Low FODMAP Diet. This diet limits foods that have been shown to exacerbate gut symptoms including - bloating, gas and pain, often called Irritable Bowel Syndrome or IBS.... I probably eat close to double the volume of salad and vegetables required each day for the average person each day. There is two reason for this. 1. I have an ridiculous appetite and need plenty of bulk to fill me up and 2. 17.01.2022 Tasty Bowl Tuesday I love to do a bit of batch cooking for both lunches and dinners - saves me cooking each day and also when Im working 12+hr days I make a big batch of this salsa and store half in the freezer for the following week.... It makes enough for 10 lunch meals (1 heaped soup label per each meal) Spicy Vegetable Salsa Sauce INGREDIENTS 1 tablespoon canola oil 2 large onions 1 large or 2 small peppers (red or green) 2 sticks celery 2 large carrots 1 large zucchini 6-10 mushrooms 1 x 440gm tinned sweet corn 1 x 440gm tinned red kidney beans 3 x 440gm tinned tomatoes (diced) 1 tablespoon basil (in squeeze bottle) 1 tablespoon chilli flakes more or less depending on your preference. I like it pretty hot 1 tablespoon parsley flakes you could use fresh and probably 3-4 tablespoons 1 teaspoon sage powder METHOD 1. Chop all ingredients into small slices or cubes 2. Add oil and cook onions, peppers, carrots and celery for 3-5mins until they start to sweat 3. Next add mushrooms and zucchini and cook for a further 2-3mins. All veggies should start to soften 4. Add all tinned ingredients (corn, beans and tomatoes), stir in well 5. Next add basil, chilli flakes, parsley and sage. Again stir well and let everything cook on low for another 5 mins until mixture starts to bubble. Let it stand for a while if packing into containers or serve immediately with quinoa, brown rice, basmati rice or wholemeal cous cous I make about cup of quinoa per each serve of salsa and add this with a good handful of spinach into a container and store in fridge. When ready to eat I heat on medium for about 4-5mins in the microwave then I have a low fat, high protein and fibre lunch which is tasty and very filling. 16.01.2022 Tasty Bowl Tuesday When I have a chance, I love to make my own bread. While I use a packet mix, I do add my own grains and seeds 1. More Fibre 2. Great Taste Multigrain Bread... INGREDIENTS 1 x packet of Laucke German Grain Bread Mix ( there are 4 x packets per box) 2 x tsp dry Yeast cup Flaxseed cup Chia Seeds cup Pumpkin seeds 370mls warm Water 1 Tbspn wholemeal flour for final knead (If you want to add other seeds or grains do so, I would keep the total added amount to 1.5-2cups) METHOD I use a dough kneader on my mixer, but you can do the same with your hands or a bread maker. Laucke has instructions on the packet which I follow. 1. Blend bread mix, seeds and yeast in a bowl. 2. Add warm water and mix /knead well. 3. Knead the dough in a mixer for 6 minutes, (10mins by hand great for building muscles). 4. Cover and let the dough rise in a warm area for ~40mins until the dough doubles in size. 5. Pull dough out onto a floured board and degas. Shape into desired rolls or pop into an oil bread tin 6. Cover again and let the dough rise in a warm area for ~40mins until the dough ~doubles in size. 7. Cook in an oven 220C normal or 200C for fan forced for ~30mins until the bread has a crusty top Laucke says they get 11 slices per loaf, where as due to the density of my bread I cut thinner slices so get ~14slices. Laucke slices are ~ 3.4gm fibre. Once I add in the seeds, my slices gets ~6.8gm fibre. Chia seeds are really high in fibre, so the more grains you add in the more fibre. 12.01.2022 Tasty Bowl Tuesday Sometimes I am looking for something a bit different, but I also know I need to clean out the fridge of leftover meats and cooked veggies. This is where a Frittata is perfect to use up some leftovers and put some eggs into my diet One Pan Frittata - hardly any mess... INGREDIENTS * Leftover Vegetables - chopped into cubes * Leftover Meats - ham, chicken, sausages - chopped into cubes * 1/2 cup sliced Mushrooms * 100gm Baby Spinach leaves * 4 x Eggs * 1/4 cup Milk * 1/2 cup grated Cheese METHOD * Cook / Heat through chopped Vegetables and Protein in an oven proof pan * Add in Mushrooms and toss through * Lay Spinach leaves on top of the mix in the pan while beating Eggs with Milk * Pour Egg mix over the Vegetables and Protein and turn the heat down low so the bottom of the pan does not burn * Start your Grill or Grill section of the oven * When the Frittata looks nearly cooked, but the top is still running / wet, place under the grill on medium for about 5mins or until the top is golden and the cheese is bubbling Serve by itself or with salad. 09.01.2022 Tasty Bowl Tuesday Here is a very simple one. Roasted Eggplant. This is a simple veggie dish, side dish and its vegan.... I wash and cut the eggplant into large chunks. With this one, I had a zucchini leftover in the veggie crisper, so I cut that into chunk too. I then tossed them in their olive oil and some cumin powder. If I was making an Asian style dish, Id swap out the cumin for garlic or salt. Then I spread on non-stick paper and cook at 200C (fan forced) for 30mins or until edges of eggplant start to turned brown / black Let cool and pop in a bowl and sprinkle with sesame seeds. INGREDIENTS - Serves 4 Brown Basmati Rice - 4 cups (cooked) 1 x Tbspn Rice Bran or Canola Oil 1 x Tspn Sesame Oil 1 small Onion (chopped) 1 x large Red Capsicum (chopped) 1-2 x sticks Celery ( chopped) 2 cups leftover Roast Pork (chopped up) 1 x cup Frozen Peas 1 x cup Frozen Corn 2 x Eggs (beaten) 2 x Tbsp HoiSin or Sweet Soy sauce Oils for Rice 1 x Tbspn Rice Bran or Canola Oil 1 x Tspn Sesame Oil METHOD * Cook rice and set aside - spread on a tray to cool * Heat oils in a deep pan or wok, and cook with Onion, Capsicum and Celery * When Onion translucent, add in Pork and heat through * Next add in Peas and Corn * Set the Pork and Vegetables aside in a bowl * Add beaten Eggs to the pan / wok, stirring through until the egg starts to form a scrambled egg consistency, then add the eggs to pork and vegetables and set aside. * Re-heat pan with more oils and add in the rice, ensuring the grains are coated in oil and the rice is heated thoroughly * Add the HoiSin or Sweet Soy to the rice and mix well through * Then add the Pork, Egg and Vegetable mix into the rice and toss well for about 2mins until everything is mixed through the rice and its all heated through Its ready to serve - Enjoy! . . . . #tastybowltuesday #tastybowlwednesday #friedrice #chinese #asian #rice #brownrice #basmatirice #comfortfood #homemade #food #nutrition #dietitian #dietitiansofinstagram #dietitianapproved #health #wellbeing #nutritionplus #nutritionplusdietitians
