25.01.2022 I’m SO excited to be preparing my first brisket. I’ve dry rubbed to leave overnight, ready for a slow cook tomorrow! I’m even more excited to use this lovely cut of buffalo. Buffalo, say what? 25.01.2022 Herbal Medicine Compounding// One of my favourite things to do is mix up herbal formulas for my patients. I absolutely adore herbs. 25.01.2022 Dairy free ain’t so bad as long as you don’t have a nut allergy! This salted caramel cashew yoghurt is the bomb, especially with a side of French toast and fresh berries. 24.01.2022 The best thing about being home, aside from being with my family, is I can eat real food again! Its a disgrace what is being fed to sick, injured and convalescent patients in hospitals and I understand theres more to it than funds. But seriously the last few days Ive not only been recovering from abdominal surgery but also a breastfeeding mumma again, and the nutrient less foods provided did not improve the situation. Breakfast in particular, after being awake feeding anot...her life you need sustenance and a bowl of corn flakes, fruit cup (yep not even fresh fruit!) and a cup of tea does not cut it! So today, our first morning home, I decided on a European breakfast (cause damn, have I missed soft cheese!), still not an epic amount of protein but much more nutrient dense and nourishing than hospital food! 24.01.2022 Vegan Chocolate Cheesecake Base 1 cup macadamia nuts 2 medjool dates ... Cheesecake 2 cups cashews, soak in water overnight, then strain and rinse 1/3 cup maple syrup 1/3 cup cacao powder 1/2 cup cacao butter, melted 1/4 vanilla pod, scrapped OR tsp vanilla essence Pinch salt Approximately 3/4 cup coconut water or water Variations I’ve tried Chocolate Salted Caramel - I make a salted caramel sauce but adding a couple of dates and extra salt works too Chocolate Raspberry - omit the maple syrup and add 1/3 cup good quality raspberry jam Chocolate Coffee - brew a strong coffee and use in place of water Blitz the macadamias and dates in a food processor until like sticky sand but not a paste. Press into a lined springform pan. Pop into fridge while making the cheesecake. Blitz the remaining ingredients, except water, in a high power blender, this is the secret to getting a silky smooth consistency, or a food processor. Add the water slowly until you get a smooth consistency, not watery, much like a cake batter. This may take some time, stop and scrap the sides and check the consistency by rubbing the mixture between two fingers. You want it as smooth as possible. You may need to add extra water. Once smooth pour on top of the prepared base. Pop into the fridge or freezer to set. To serve remove from freezer and allow to defrost for an hour or so on the bench or leave in the fridge overnight. 20.01.2022 For some reason Im feeling a twinge of morning sickness today. Ive been nauseous free for nearly 11 weeks now so Im not keen to be sick again! There were a few remedies that I lived on during my first trimester that helped a lot, so I decided to have a dose now. One of these go tos for me is Perilla. Perilla is a herb from the mint family that has been traditionally used for morning sickness. It surprisingly doesnt taste too bad (though I love most herbs, even those oth...ers find really bitter!) and it works rather quickly. Its super handy to have on have and works well as drop dose. I take about 6 drops in a glass of water, which I sip. 20.01.2022 34 years around the sun and what a crazy year this last one has been. Reflecting back, this time last year I was heart broken, another year gone without conceiving, struggling with infertility and thinking it would never happen. To now having a gorgeous baby boy snuggling me. And the time between, the ups and downs of pregnancy during a pandemic, a birth plan gone awry, recovering from an emergency caesarean and the joys and sleep deprivation of becoming a new parent again. T...his year has brought so much change, and not just for myself but the entire world. It has been challenging to find our place within this change. However I decided, mid pregnancy during this pandemic, to slow down. Take each day as it comes and to accept what it brings. This meant I didnt achieve certain work and life goals, putting me back from where I had planned and worked so hard to be. Yet rather than focusing on what could be perceived as a failure I chose to rejoice in what I had, spending each moment in gratitude as no doubt I could be much worse off. With so much uncertainty in the world around us I hope you can find a place of peace. Enjoy the small moments, be mindful and conscious of your time in the present. More than ever no one knows what the future looks like and I certainly hope it improves. 19.01.2022 I ate a bunch of unhealthy (but bloody delicious) sweet food over the weekend and ever since Ive been craving sugar and having a hard time not consuming everything sweet in my path!! 18.01.2022 Todays greenery. Its weird as the weather is cooler but Ive been craving smoothies. In fact Ive been wanting cold drinks a lot with this pregnancy, which is a little out of character. Whenever I make a smoothie I just throw in a bunch of veg, some fruit, healthy fats, protein and usually some supplements too. I dont really measure (bad habit of mine for all cooking cause if it turns out amazing I never know what Ive done!). The worst part is the stigma surrounding it, which often discourages people from seeking help at a time when feeling utterly alone. 16.01.2022 Third trimester. On the home stretch, woohoo! Luckily for me the nausea has diminished, pregnancy insomnia still comes and goes, Im a tad uncomfortable due to an expanding and growing belly but all in all feeling good! And this time around cramps are not a daily occurrence! Mostly because Ive been way more onto what Im eating and focusing on specific nutrients, such as calcium, magnesium, potassium and iron (for the restless legs especially). Each pregnancy is different an...d comes with different symptoms. Cramps seem to be a pretty common one though, so I suggest magnesium flake baths and topical magnesium lotions/sprays my favourites come from @amazingoilsmagnesium and if thats not enough talk to your health care professional for a quality supplement! For some magnesium may not be the only culprit so if magnesium doesnt do the trick check out the other nutrients I mentioned. 16.01.2022 As a new mummy again I spend all my time caring for my newborn, plus my big girl and my hubby. My days are filled with school lunches, breakfasts, dinners, washing, cleaning, nappies, breastfeeding, bathing and so the list goes on. I am constantly putting others needs before my own and that’s ok for a short while. However, I found myself getting a little cranky and resentful of looking after everyone and no one looking after me (this isn’t entirely true, my husband works his ...ass off so I can afford to stay at home with my baby!), anyhow I found this skirt I LOVE and thought screw it, we can call online shopping a form of self care right??!! 16.01.2022 BREASTFEEDING// With it being #worldbreastfeedingweek I thought I’d share some on my breastfeeding journey. I’m lucky to be able to, many women really struggle to breastfeed for various reasons so I am always grateful for the opportunity to do so. It’s this gratitude I hold on to when it hurts, in the very early hours of the morning when my body aches and doesn’t want to get up and sleep deprivation is strong. Breastmilk is literally magic! However, while breastmilk is aweso...me, FED is best NOT breast is best! Formula can be as good as it gets for some and there certainly are some good formulas on the market. Don’t ever let anyone make you feel inadequate for formula feeding. I really struggled feeding with my first baby, like REALLY struggled. There were tears and sore nipples and times I wanted to give up. I feel sometimes we don’t share the reality and struggles. But I persisted and it took the better part of 2 months to really get it happening. Then I went from complete noob to pro and fed until she was 22months! I wanted to get to 24, but I was over it and every feed left me feeling unhappy. And if it’s not right for both of you anymore then it’s time to wean. This time is completely different. My sweet boy has the best latch and feeds incredibly well making it an absolute dream. However, there’s still sore nipples, frustration when waiting for my milk to come in (which took longer post op!) and cluster feeds that drive me a bit batty (but gives me opportunity to write posts!). So it’s not all rainbows and sunshine, but it’s still amazing that I can solely feed and nourish this little human. For me the biggest thing around breastfeeding is every woman should feel empowered to feed when, where and how she wants. She should never feel shame or guilt. Breastfeeding is natural and beautiful and creates a sacred bond between mother and child and does not belong behind closed doors, suffocating cloths or toilet stalls! I start off the school term super excited and keen to make beautiful, nutritious lunches and then by the end of the term Im exhausted! I find the rush of the morning super stressful, so being prepared is my secret. My top lunch tips are... 1) Get input but not too much, give 2 options for a main or snack, this involves the child and you have less chance of lunch returning uneaten! 2) Prep food! The night before I...ll make sure Ive got everything ready to whip up in the morning or Ill actually make it the night before (not wraps or sandwiches, no one likes those soggy!) 3) Make a weeks worth of snacks over the weekend, for us this may be nut free bliss balls, gut gummies, muffins or biscuits. 4) I find variety is the key for us, but some little people (and big people) are happy to eat the same thing all the time. Regardless, balance is important - remember protein, healthy fats, complex carbs, fruit & veggies. Theres the main (weve just discovered Genius gluten free pita wraps, OMG amazing!) this is a sandwich, wrap, fritters, quiche, leftover meat, egg wrap, sushi, tapas style (meat/cheese, veggie sticks, olives) etc - basically protein and veggies; fruit break; and a couple of snacks, maybe a muffin, biscuit, bliss ball, gummies or sometimes popcorn/chips. I try to avoid packaged food but sometimes its quick and easy! If Im lacking protein in the main I find chia puddings, quark panna cotta or gut gummies a good addition. Now dont get me wrong there are days, sometimes many days, where my kid gets a ham and cheese sandwich with veggie sticks, banana and popcorn, Im NOT super Mum! And well see what happens when bubba arrives But I do find a little preparation goes a long way and while Im prepping for her I prep for the rest of us, everyone deserves a nutritious lunch! 13.01.2022 Making breakfast fun and festive. My go to pancakes with a side of gut healing gummy stars and moons. Where time permits I try to make kid’s breakfasts interesting, playing with shapes and colours. I find this particularly helpful for little ones that don’t show much interest in food. Buckwheat Pancakes 1 cup milk of choice (I use oat), more if consistency is thick... 2 eggs 1/2 cup gluten free flour or almond meal 1/2 cup buckwheat flour 1 tsp baking soda 1 tsp Apple cider vinegar Coconut oil for cooking I make pancake batter in my blender, layering ingredients in this order - milk, eggs, flour, baking soda and pour the apple cider vinegar over the baking soda (it’ll fizz, this helps them rise), blend until combined. Without a blender add all ingredients to a bowl, beat together with a whisk or hand held beater. Add coconut oil to a hot fry pan, pour batter into pan, flip when bubbles come to the surface cook a further minute or so. 12.01.2022 Maternity Leave// Ive been on my fertility journey for awhile, through the ups and downs, the struggles, disappointments and tears. To the moment those two pink lines appeared, the joy and fears. I wasnt sure it would happen again for us, but it did. Then finding myself pregnant during a pandemic, wasnt quite what I had in mind but I wouldnt change it for the world! Now the time has come for me to finish up for maternity leave. I absolutely love my job, the people Ive m...et and helped along the way. While Ill miss the work Im also really looking forward to slowing down, spending time with my family and ultimately meeting our beautiful new baby when the time comes. 12.01.2022 Remember to keep hydrated on these hot Australian summer days! Aim for 2-3 litres of fluids per day, more with exercise, this should consist of mostly water but herbal teas, kombucha, fruit and vegetable juices and broths count also. Coffee and other caffeinated beverages don’t count as daily fluid intake, so make sure to drink a glass of water for each of these. Sometimes water can get a bit boring so we like to jazz it up by adding fruit or herbs, or drinking it sparkling!... Thyme & Grapefruit Kombucha Mocktail 1 can/small bottle flavoured kombucha (I used Remedy Peach) Juice of 1/2 grapefruit, the other half sliced thinly into rounds A few sprigs of fresh thyme Sparkling water Add ingredients to a large jug, give a little stir. I’ve felt out of control, alone and scared for the future. I’ve also felt empowered, excited and ready to start something new. This year has pushed me to really find my truth in what I want and need. 07.01.2022 This is my new favourite storage!! Silicon ziplock bags from @ever.eco what a great idea! The perfect thing to store frozen goods. Yesterday was not a great day, I had crazy Braxton Hicks for 7 hours, my body was telling me SLOW THE F DOWN!! Ive been so consumed with tying up all the loose ends, making sure my patients are ok and happy, taking on WAY too much work this far along in my pregnancy. So when these practice contractions were painful I panicked and realised Ive... been doing so much for everyone else and totally neglecting my body and growing baby. Ive got a lot of stuff for baby but nothing organised, I dont have meals prepped or a hospital bag in case I need one. So in a panic I packed a bag, I didnt need it. Were fine. I saw my midwife and was told to take it easy, so I spent the day in bed, rearranged some work and called my mum for help! Ive since been preparing, small steps at a time as I need to take it slow! And the first thing I did was freeze yoghurt cubes for quick smoothies!! Back to these amazing bags....I plan to fill them with ready to go snacks for labour/post birth. 07.01.2022 30 days of being your mumma, at least of you being earth side rather than in my belly. My eyes feel like theyre going to fall out Im so tired. The sleepless nights bring a little dread as the day closes. Theres not enough time, I have not enough hands for all the work. The days are quick to pass but the nights drag on. 07.01.2022 BONE BROTH// Great addition to the diet for gut and immune health! I make a batch every month and incorporate into daily meals. Heres my recipe. Ingredients Organic Bones - poultry, beef, lamb, fish or shellfish (pork isnt recommended), any kind of bone may be used (marrow, knuckle, meaty etc.) *I get bones from Sherwood Road Organic Meats at Rocklea Markets, Brisbane*... Cool filtered water, enough to cover bones Approximately 1/4 cup apple cider vinegar Optional: celery, carrot, onion, garlic, parsley/other herbs Himalayan or Celtic sea salt & pepper Method - Place bones in a large pot or slow cooker, add apple cider vinegar and cover with water. Leave to sit for 1 hour so the vinegar can leach the minerals out of the bones. - After sitting for an hour, bring to a boil and skim the scum from the top and discard. - Reduce to a simmer, cover, and cook for 24-72 hours (if youre not comfortable leaving a pot on the stove to simmer, turn it off overnight and let it sit, then turn it back on in the morning, allowing to simmer all day). This is where a slow cooker becomes handy, just turn it on low heat and leave it be! - During the last few hours of cooking, add the optional vegetables. In the final 10 minutes of cooking add the optional parsley (for extra flavour and minerals). - Let the broth cool and strain it, making sure all marrow is knocked out of the marrowbones and into the broth. - Season with salt and pepper to taste. - Store in the fridge for up to 7 days or freezer for up to 6 months. TIP: freeze in individual serves i.e. 1-2 cups or in an ice cube tray for convenience. Note: cold broth may turn gelatinous if containing enough gelatin, it will liquify again when warmed. Uses Drink as is, seasoning with desired herbs/spices. Use as a base for soup/stew, adding vegetables and/or meat. Use in place of stock in any recipe requiring stock. Cook rice and quinoa in broth instead of water.

04.01.2022 The best thing about being home, aside from being with my family, is I can eat real food again! It’s a disgrace what is being fed to sick, injured and convalescent patients in hospitals and I understand there’s more to it than funds. But seriously the last few days I’ve not only been recovering from abdominal surgery but also a breastfeeding mumma again, and the nutrient less foods provided did not improve the situation. Breakfast in particular, after being awake feeding anot...her life you need sustenance and a bowl of corn flakes, fruit cup (yep not even fresh fruit!) and a cup of tea does not cut it! So today, our first morning home, I decided on a European breakfast (cause damn, have I missed soft cheese!), still not an epic amount of protein but much more nutrient dense and nourishing than hospital food! 01.01.2022 BREASTFEEDING// With it being #worldbreastfeedingweek I thought Id share some on my breastfeeding journey. Im lucky to be able to, many women really struggle to breastfeed for various reasons so I am always grateful for the opportunity to do so. Its this gratitude I hold on to when it hurts, in the very early hours of the morning when my body aches and doesnt want to get up and sleep deprivation is strong. Breastmilk is literally magic! However, while breastmilk is aweso...me, FED is best NOT breast is best! Formula can be as good as it gets for some and there certainly are some good formulas on the market. Dont ever let anyone make you feel inadequate for formula feeding. I really struggled feeding with my first baby, like REALLY struggled. There were tears and sore nipples and times I wanted to give up. I feel sometimes we dont share the reality and struggles. But I persisted and it took the better part of 2 months to really get it happening. Then I went from complete noob to pro and fed until she was 22months! I wanted to get to 24, but I was over it and every feed left me feeling unhappy. And if its not right for both of you anymore then its time to wean. This time is completely different. My sweet boy has the best latch and feeds incredibly well making it an absolute dream. However, theres still sore nipples, frustration when waiting for my milk to come in (which took longer post op!) and cluster feeds that drive me a bit batty (but gives me opportunity to write posts!). So its not all rainbows and sunshine, but its still amazing that I can solely feed and nourish this little human. For me the biggest thing around breastfeeding is every woman should feel empowered to feed when, where and how she wants. She should never feel shame or guilt.
