21.01.2022 REVIEW || A flavour packed experience awaits diners at Rak Thai Kitchen Toowoomba. This unassuming little restaurant tucked away in the Westridge Shopping Cent...re offers up regular Asian style fare but the experience is elevated by the exceptional traditional cooking skills of the kitchen team and the use of the freshest produce in every dish. Since COVID restrictions have been lifted you can once again dine in at Rak Thai so we gathered up some friends and a bottle of red (Rak Thai is BYO) and booked a table. Our share style meal started with the deep fried housemade pork and cabbage dim sim served with sweet chilli (4 for $7) followed by BBQ chicken skewers liberally drizzled with a delicious house made satay sauce ($7.50 for 4). Then some honey king prawns, not a Thai dish, but I have to say these were cooked perfectly. Crisp batter, sweet, sticky honey glaze, all served on a bed of fresh steamed vegetables. Our final starter, vegetarian spring rolls ($6 for 4 pieces)were gone in seconds! For mains we started with Beef Massaman Curry ($16), and to be honest this is one of the best you will find in Toowoomba. I order this dish every time I come to Rak Thai. Rich spiced gravy with just enough heat, encasing melt in your mouth chunks of slow cooked beef and potato. (Note: If you come here and only want to order one dish. Make it this one) Our group shared several other dishes for our main course in what turned out to be an absolute feast! Stir Fried Cashew Chicken with vegetables ($16), Traditional Pad Thai with chicken and prawns, tossed in housemade tamarind sauce, superb! ($14). Sweet & sour pork ($15) and a crispy boneless chicken dish with lemon sauce were also a big hit ($14) Finally a dish called Drunken Noodle ($14) this authentic Thai dish was on the spicy side. A combination of flat noodle, pork, chilli paste, basil and vegetables - mouth-wateringly good! Rak Thai (the little restaurant with a big reputation) is a fave with my family and it seems a lot of other Toowoomba diners too! If you want to sample a lunchtime takeaway meal they also have a range of 16 different lunch special dishes (yep 16) for just $10.50 each. Congratulations to owners Cecile and Nui, you have both worked so very hard to build this restaurant and dining here is always an absolute pleasure

19.01.2022 FRIDAY FRESH UPDATE || Mango Recipes Sam’s Green Mango Salad Recipe 2 firm Green mangoes ... 2 cups bean sprouts 1/2 cup chopped fresh coriander 1 /2 cup fresh mint 1 1/2 cups green beans diced fresh 1 punnet cherry toms cut in 1/2 3 spring onions, sliced handful of peanuts or cashews, roughly chopped 1/ 2 cup fresh basil Optional: 1 cup cooked chicken or shrimp, or fried tofu if vegetarian/vegan (cut into small cubes) 1 fresh-cut red chilli SALAD DRESSING: 3 Tbsp. fish sauce, OR 4 Tbsp. soy sauce if vegetarian/vegan 1/4 cup freshly-squeezed lime juice 2 Tbsp. brown sugar, or more to taste Preparation: 1. Mix together all the salad dressing ingredients in a bowl or cup. The dressing should be a mingling of sweet, sour, spicy and salty, but more sweet than sour. Set aside. 2. Using a sharp paring knife, peel skin from mangoes. The flesh of the mango should be firm and light yellow 3. Using a medium to large-size grater (the kind you would use for cabbage salad), grate the flesh of the mangoes into a mixing bowl. Keep in mind there is a large flat stone at the mango's centre. 4. Add the bean sprouts, beans, cherry toms, mint coriander, spring onions, cooked chicken, shrimp or tofu (if using), the fresh-cut chilli. Toss well to combine. 5. Add the dressing and toss again. Do a taste-test. Add more fish sauce or soy sauce instead of salt. If you prefer it sweeter, add a little more sugar (honey works too). If you prefer more spice, add more chilli. 6. If too salty or sweet, add more lime juice. 7. Place on a serving platter. Sprinkle the nuts over top plus the basil. Enjoy! Avocado and Mango Salad Lettuce Cups Ingredients Salad: 3 rashers bacon 2 mignonette lettuces 2 mangoes, peeled and cubed 2 avocados, peeled and cubed 1/2 cup (65g) unsalted roasted cashews, roughly chopped Dressing: 2 tablespoons extra virgin olive oil 1 tablespoon lemon juice 1 tablespoon lime juice 1 teaspoon French mustard 1 teaspoon thickened cream Method 1. Trim the bacon and cut into thin strips. Fry in a non-stick pan until brown and crisp, then drain on paper towels and leave to cool. 2. Pull the lettuce apart and wash and dry the leaves. Arrange the lettuce, mangoes and avocado in a serving dish. Sprinkle the cashews and bacon over the top. 3. Put all the dressing ingredients into a small screw-top jar, and shake well to combine. 4.
