21.01.2022 Five spiced powder, commonly used in Chinese and Vietnamese cuisines. It’s a spice mixture of five spices; star anise, cloves, cinnamon stick, fennel seeds and Szechuan peppercorns. I made my very own five spiced powder, a simple authentic recipe that takes less than 10 minutes. I lightly toasted the spices for a couple of minutes, then placed them in my Thermomix (or spice/coffee grinder) and grind until smooth. Place in an air tight jar and it can last up to 6 months. Thi...s five spiced pork mixed with my favourite sauces is one of my absolute go to summer recipes. I love such recipes where I marinade the meat in the morning and by evening I quickly stir fry as it gives the best flavour you want. Easy and super tasty. I served with homemade prawn chilli oil, delicious snack for my family on a cold rainy day. Gyoza is dumplings filled with minced or ground meat (pork/prawns/chicken/beef) mixed with chopped vegetables. They’re also known as potstickers. Happy Cooking Ingredients (Chilli Oil) 3/4 cup vegetable oil 3 cloves garlic (finely chopped) 1 tbsp ginger (finely chopped) 1 sprig spring onion (finely chopped - white part only) 3 1/2 tbsp chilli flakes (I used Hoyts chilli flakes - you can get it from Coles) 3 1/2 tbsp dried roasted shrimps (finely blended - dry) 1 1/2 tsp sugar 1/2 tsp salt Method Have these ingredients placed in a heating proof bowl; garlic, ginger, spring onion, chilli flakes, dried prawn, sugar and salt. 11.01.2022 The heat is rising in Australia, and the only way to cool down at the moment is in the water, a sure sign that Australia Day is on the way... Australia Day means barbequing every type of meat known to man, and of course, accompanied by an icy chilled beer or white wine. This year I decided to grill some hotdogs or shall I say "Aussie Dogs"; oven-baked cheesy hotdog buns with hotdog wrapped in an omelette with caramelised onions and garnished with pickled gherkins and drizzled... with classic mustard and aioli sauce... 10.01.2022 My son loves his fried chicken, bite-sized chicken thighs and deep-fried to a golden brown. I’ve made this dish umpteen times and it’s always a hit in my house. Sweet and Sour Chicken... it is a very popular and classic Chinese dish. You can definitely find this dish in any Chinese restaurants either eat in or takeout meal. I decided to put a little bit of Japanese touch in this dish, fried the chicken Japanese style (Karaage) and added some sake into my sauce. It was delic...ious! Fried chicken is always tasty on its own, but I’m sure you will thoroughly enjoy this sweet, sour and zingy version as well. Well, if you’re one of them, I hope I can change your mind with this easy recipe that you can simply cook at home. If you cook it right, it is neither mushy nor gooey. SAMBAL BEANS AND EGGPLANT Serves 3-4 Ingredients 1 large eggplant (quartered then cut into lengthwise, place in a bowl of salted water) 15 snake beans (cut into 2 inches) 1 shallot (sliced) 2 cloves of garlic (chopped) 1/2 tbsp crispy prawn chilli 1/4 cup of dried shrimp skin (very tiny shrimps) 2-3 tbsp vegetable oil Salt and sugar to taste For sambal paste (blended) 1 red onion 4 cloves garlic 3-4 dried chillies (soaked) 1 tbsp toasted belacan 1/4 cup water Method First, make the sambal paste. Roughly chop the onion, garlic, dried chillies and water. Put in a blender together with the toasted belacan and blend until the paste is smooth. Set aside. In a pot of boiling water, add some salt. Toss in the snake beans, and blanch for 30-45 seconds. Remove in a colander and rinse under running cold tap water until beans have cooled down. Set aside. In a hot wok or pan, add cooking oil. Once the oil is warm enough, saute the sambal paste and chopped garlic until fragrant. Be careful not to burn the paste. Next, add the eggplant and cook for a couple of minutes with the lid covered. Remove the lid and check. Add a bit of water if necessary to further cook the eggplant. Continue to cook for another minute or two or until the eggplant is soft, with the lid covered again. Add the snake beans, crispy prawn chilli, sliced shallots, and dried shrimp skin, together with a pinch of salt and a teaspoon of sugar. Toss everything well and cook for a couple of minutes. Dish out in a bowl or a plate. Serve immediately with hot jasmine rice, or chicken flavoured rice with a bowl of chicken herbal soup. Delicious! Bon Appetite!

I had some fried chicken leftover from yesterday, I deboned and shredded the meat, and decided to fry some rice for lunch today adding some chopped vegetables; carrots, snake beans and capsicum. ... Nasi Goreng is one of those fantastic plate recipes that you can carry over to the sofa and devour whilst watching a movie - no need for a takeaway. It’s simple yet so satisfying and delicious. The key to a tasty plate of fried rice is the rice. Using a day old rice results better in the fried rice because it separates nicely into individual grains, without clumping it. You can serve it with some sambal belacan, a sunny side up and keropok (fish/prawn fritters). 03.01.2022 Nasi Lemak with Fried Chicken is one of my all-time favourites. Fragrance rice cooked in coconut milk and pandan leaves, served with spicy sambal, fried anchovies, toasted peanuts, cucumber hard-boiled egg and fried chicken. Nasi Lemak is a national dish of Malaysia. I usually have this as breakfast when I’m back home, little packets of joy, wrapped in traditional daun pisang banana leaf, to give a tantalising aroma to my perfect breakfast. To me, the sambal (spicy sauce...) is the highlight of this dish. The sambal is stirred slowly and meticulously until its colour turns to deep red, which means the chillies, onions and belacan are cooked well to release their natural sweetness. Nasi Lemak can be served just by itself, or along with fried chicken or some meat rendang (dry curry cooked with coconut milk). 03.01.2022 When I choose to go fusion with my meal one night, this is what I whipped up. I decided to experiment a bit and made spicy pork keema with fettuccine. OMG, it was superb, delicious and flavourful... I’m telling you, this is one you need to try. Keema is simply ground or minced meat cooked in Indian spices; it tastes exceptionally delicious with soft textures. I made pork keema this time with some snake beans, it was delightful. You can use any noodle pasta you like; spag...hetti, fettuccine, linguine, or penne, fusilli etc. I used fresh fettuccine since I had that in my refrigerator.
