03.01.2022 Did someone say cheesecake?! Yesssssss please! A truly #rawsome no bake, gluten and refined sugar free recipe that's #madewithrawc organic coconut oil by the fab @eatingforfuel Mango & Passionfruit Cheesecake Squares Base:... 1 cup coconut flour 1/4 cup gluten free oats 1/4 cup maple syrup greenlifewarehouse 3-4 tbsp Raw C Coconut oil, melted Filling 1 cup frozen mango 150g passionfruit yoghurt 250g light cream cheese 2 tbsp maple syrup (optional if you like it extra sweet) Method: 1. For the base, simply mix all base ingredients together until well combined and flatten into a lined square slice tray, using a fork to press it down. Pop base in the fridge while you make the cheesecake layer. 2. For the cheesecake layer, add your frozen mango, cream cheese, yoghurt and maple syrup into a blender and blitz until smooth. 3. Pour the cheesecake mixture over your base, now freeze for 2-3 hours. 4. When set, chop into 8-10 squares, top with some fresh passionfruit pulp to serve. See more

Pinch salt Filling (ensure all ingredients are at room temperature) 250g light cream cheese 120g twogoodau yogurt 30g Raw C coconut oil, melted 40g rice malt syrup 1 scoop vanilla protein 1 punnet raspberries Raspberry top 100g raspberries, defrosted 10g coconut sugar 5g corn flour Directions 1 Make base by pulsing biscuits in a food processor until crumbs form 2 Add coconut oil and salt before pulsing again until a wet crumble forms 3 Press crumble firmly into 6 silicon cupcake tins and refrigerate whilst making cheesecake 4 In a blender/food processor, blend cream cheese and yogurt until smooth (may have to stop and scrape down the sides every few minutes 5 Mix Raw C coconut oil and rice malt syrup until smooth before adding into the cream cheese mixture and blending until smooth 6 Fold in raspberries until evenly distributed and divide matter evenly between the 6 cupcake moulds 7 Freeze for 3-4 hours or until solid 8 Make raspberry layer by microwaving berries for 30s and mashing to get rid of the big lumps 9 Add corn flour and sugar and mix until dissolved Microwave for 30s and mix until mixture thickens and is translucent. Not only delicious, but also the perfect way to sneak in some extra veg for those fussy eaters #rawsome Ingredients 1.5 c of vettapasta smart protein flour 1 tsp baking soda... Pinch of salt 2 medium extra ripe bananas (mashed) 1/3 c honey/rice malt syrup 1 large egg 1 tsp vanilla extract 1 heaped c zucchini that’s been squeezed of ALL excess moisture with a paper towel 2 tbsp melted Raw C coconut oil 1/3 c cacao powder 1/3 c milk of your choice 1/4 c dark chocolate chips . Method 1) Preheat oven to 180 degrees and line loaf pan with baking paper. 2 )In a medium bowl, whisk together the dry ingredients: flour, baking soda and salt. Set aside. In a large bowl, mix together the mashed banana, honey, egg, vanilla extract, shredded zucchini. (We’ll be adding the Raw C coconut oil later. 3) Slowly stir in the dry ingredients until smooth then stir in the Raw C coconut oil. 4) Divide batter in half; adding half of the batter to a seperate medium bowl. Stir in the cacao, milk and cup chocolate chips into one of the batters, mixing until just combined. 5) Spoon the chocolate batter into loaf pan & then add regular batter on top.
