16.01.2022 Thank you all for liking my yummy RAW version of "Chocolate Orange Cheesecake"! Feel free to like and share to all Base: 1 cup almonds 1 cup walnuts ... 1/4 cup raw cocao powder 1/4 cup rice malt syrup 2 tbs coconut oil Pinch of himalayan salt/sea salt Filling: 2.5 cups raw cashews 1/2 cup raw cocao powder 1/2 cup rice malt syrup 1/4 cup coconut oil 1 tsp vanilla essence 2 tbs coconut milk Pinch of salt Juice and rind of 2-3 large oranges Instructions: 1. Using a food processor mix all the base ingredients together starting with the nuts first until they turn into rough crumb size. Then add the cocao powder until mixed through, then the rice malt syrup, coco oil then salt. 2. Pour into a lined spring form pan with baking paper, then squash out to the sides and flatten until smooth. Place in freezer. 3. Process the cashews (best soaked 8hrs or overnight then drained, so they swell up and go further) until smooth gradually adding the half the rind and half the juice. Add the cocao and mix. Then the rice syrup, coco oil, the rest off the rind, juice, essence and salt. Mix until super smooth so you get nice soft texture! 4. Pour over base. Cut up half an orange into little cubes drop into mixture. Stick in the freezer for 6 hours or best overnight! Best to decorate while half set with rind or slices of orange. ~Take out 30 mins before serving ~Make sure you have a big sharp knife to cut it ~Will keep in freezer for ages or a few days in the fridge! Enjoy!!
