25.01.2022 SMOOTHIE BOWLS Having to adjust the consistency of my smoothies for photo purposes now that the weather is warming up. Haha. I made these but they were a little melty before I got a shot in. Oops. The smoothie base was frozen bananas, @alpro soy milk, maca powder and pea protein powder and I topped it with bluebs, strawbs, banana, coconut and cacao nibs.... 25.01.2022 APPLE CRUMBLE CAKE You might have seen me gloating recently about my apple crumble cake creation. A few months back I had an abundance of stewed apple and rhubarb in my fridge and decided to turn it into a dessert, instead of just putting it on top of my porridge. This cake is soooo moist and topped with a sweet, buttery and crunchy crumb. I love it and I hope you do too! INGREDIENTS STEWED APPLES... 300g of apple, peeled and cubed 1tsp cinnamon 1/4 tsp all spice 3 tsp raw sugar 2 tbsp water CAKE 2 cups of @goodharvestau plain flour 1 cup of raw sugar 1 tsp baking powder 1/4 baking soda 1/2 tsp sea salt 1 tsp vanilla extract 1 cup soy milk (or milk of choice) 1/3 cup of oilive oil (or other vegetable oil) 1 tbsp white vinegar CRUMBLE 1 cup of @goodharvestau plain flour 1/3 brown sugar, firmly packed 1/3 raw sugar 1/3 butter (I used non dairy) 1/2 tsp salt HOW TO Preheat over to 180C Line a round cake tin with baking paper and set aside. I used a 21x21x7 inch tin. To stew apples, add all ingredients (apple, cinnamon, allspice, sugar and water) to a small pot and heat on medium heat until the apples are nice and soft but still hold their form. Set aside to cool. To make crumble topping combine sugar, @goodharvestau flour and salt in a mixing bowl. Using your fingers (or a fork) mix the butter into the dry ingredients until you have a crumble/crumb consistency. Add soy milk and vinegar to a small bowl and stir. This mixture will thicken and should be a little like a buttermilk consistency. Set aside. In a large mixing bowl, combine @goodharvestau flour, sugar, baking powder, baking soda and sea salt. Pour in your soy milk and vinegar mixture as well as remaining ingredients (oil and vanilla) and stir gently. Pour cake batter mixture into your lined cake tin. Gently top the cake batter with stewed apples and then sprinkle your crumble mixture on top of the stewed apples, gently pressing down. I put a little of the stewed apple mixture into the cske batter, so theres apple chunks throughout, but this is optional. Place cake in the oven and bake for 40-50 minutes. Check cake during the baking to make sure the crumble top is not browing too much. You just want it to look golden. If its browning too much you can cover the top with alfoil and continue to bake. Remove from the oven. Insert a skewer or toothpick into the centre, if it comes out clean your cake is done. If it comes out with wet cake batter bake for a little longer. Remove from tin when cool. Cake will keep in a airtight container for up to four days, but it didnt last that long in our house.

24.01.2022 CHOC COATED PB BITES I love and hate that I come up with some really good recipes when Im completely winging it. On one hand Im like "uhhhyeah! look at me channelling that food wizard energy"; on the other hand Im like "this is so good, but I bet Im never going to be able to recreate this recipe as well again, even if I really try". Does this happen to anyone else? I threw these chocolate coated peanut butter bites together this afternoon and theyre soooo good!! 23.01.2022 POTATO & KALE SALAD with avocado and lime dressing I had leftover sweet potato and kipfler potato which was what started as the base of this meal idea. I don't have an exact recipe since I threw it together, but I'll do my best to give you enough to recreate it. In a bowl I put about 1/3 of a head of green kale (roughly torn) and about 90 grams of microgreen pea shoots. I topped that with about 2 cups of roasted sweet potato and kipfler potato (cut into chunks). For the avo...cado and lime dressing it was 1/2 an avocado, 2 teaspoons of Dijon mustard, juice of half a lime and a little water to blend it all together. I seasoned the dressing with a little maple syrup, salt and pepper. You could add a bit of olive oil if you want the dressing to coat the leaves a little more. Then I topped with with fresh dill and spring onion. So delish! I was going to save half for lunch tomorrow but ended up eating the whole bowl in one go - hello, big food baby. 23.01.2022 SMOOTHIE BOWLS *: Can't get enough of them even though my body is telling me it's oat season. For this creamy, dreamy banana smoothie I used - 240g frozen banana (ultra spotty pre-freezing) - 200ml soy milk... - 1tsp of maca powder Blended those ingredients to make my smoothie bowl base and then topped it with fresh banana, soy yoghurt, the most delicious granola from @leawoodhemp and some @leawoodhemp seeds . 22.01.2022 CURRY LAKSA Refining the laksa making skills since lockdown means no @shakaharitoo or @vegiemumfitzroy - my fave places for laksa in Melbourne. This broth is overloaded with flavours from lemongrass, ginger, galangal, coriander and coconut cream. This version of laksa has pan fried eggplant and pumpkin, which were falling apart in the broth. Nom. Theres also some mock chickn, tofu, noodles and bok choy under all that broth. Cant wait to cook this for friends when lockdown is over! #laksa #veganlaksa #tofu

22.01.2022 NOURISH BOWL Bowl for the soul, packed full of plant goodness. This bowl has rice, pan fried tofu, snowpeas, broccoli, avocado, sauerkraut, hemp seeds and tahini. I bought sauerkraut for the first time in a while and I honestly forgot how much I love it! Im going to have to grab some cabbage from work on the weekend and try and make some at home. 21.01.2022 GARLIC & ROSEMARY FOCACCIA For anyone that's still on lockdown and passing time with some baking, or for those of you who found a new love of cooking and baking during iso, here's a new recipe for you. I love this fresh out of the oven with some homemade hummus or balsamic and olive oil to dip it in. Yum. INGREDIENTS 2 1/2 cups of @goodharvestau all purpose flour... 1 sachet of dried yeast (7 grams) 1/2 tsp sea salt 1/2 cup olive oil 1 tsp sugar 1 tsp minced garlic 2-3 garlic cloves Fresh rosemary Black pepper HOW TO Combine the minced garlic and olive oil into a small pan and place over low heat for 5 minutes. Stir occasionally. Remove from heat if garlic starts to brown, you don't want to burn it. Set aside. In a large bowl, combine the warm water, yeast and sugar. Stir a few times and then leave to activate. Add in your 1 cup of @goodharvestau flour and your garlic oil mixture (leaving a 2 tablespoons worth for the top of the bread) and stir. Leave for 5-10 minutes before stirring in the rest of the flour. Using your hands, gently mix yoir dough into a ball before pouring out onto lightly floured surface. Knead the dough for 10 minutes or until smooth. Transfer dough to a lightly oiled bowl, cover with a warm, damp tea towel or cling wrap. Place bowl in a warm spot in your kitchen and let rise for one hour. Heat your oven to 200'C Line a baking pan with baking paper. Transfer your dough to your lined baking pan and press into the pan with your fingers. Drizzle the remaining garlic oil on top. Using your fingers or the back of a wooden spoon, make dimples in the top of the dough and then sprinkle with sliced garlic, rosemary sprigs and a little black pepper. Bake for 15-20 minutes until golden. Remove from tin and cool on a wire wrack before slicing. @goodharvestau #foccacia #baking

20.01.2022 RAW CARROT CAKE I've recently had an urge to create (and eat) raw food lately. This raw carrot cake I made yesterday is soooo moist, delicious and free from dairy, eggs and gluten. I topped it with a lemon, cream cheeze frosting that's so zesty and zingy. YUM! The cakes texture is a little different to how I would usually have it, but that's because I made it in my @vitamix_aunz and not a good processor. I'm currently in the market for a food processor, and possibly upgrade... my Vitamix too, so let me know if you have any recommendations. SWIPE LEFT Caramel, hazelnut and banana smoothie bowl topped with @leawoodhemp granola and coconut or Avocado toast with sauteed mushrooms, sauteed beet leaves, @orgranfoods scrambled vegg and baked beans... Ive also been waiting for a chance to share a photo with baked beans on my feed, because Im a huge fan of them. Theyve got carbs, protein and fibre and I dont know why vegans dont promote them more. That being said, theres also carbs, protein, fibre and healthy fats in my smoothie bowl so dont let me talking up baked beans change youre opinion haha. 17.01.2022 ALMOND BUTTER & BANANA OATS Kinda sticking to a theme of banana, blueberries and nut butter in my breakfasts at the moment. Im glad thats what my body is craving, because my local store has been out of frozen berries for months now. I used @feel_good_foods oats, @pureharvest soy milk and @powersuperfoods maca powder for my oats, and then topped them with @99th_monkey almond butter (YUM!), maple syrup, banana, blueberries, cacao nibs and coconut flakes.... Bit of a real talk here: Ive been looking at applying for a permit to go back home and researching what supporting paperwork I would need for an application. Its looking quite unfeasible though. Hotel quarantine is about $3000 for two weeks (and is mandatory) and flights back home are at least $600, then theres no income while Im off work and still have to pay rent if I cant transfer my lease etc. It would be over $5000. Yikes. I feel for everyone in this position (or worse positions) that are desperate to get home from abroad, or get home to their families. For me, I think its the unknowing of when Ill get to see them that makes it really hard. For a real wanderer like myself, that is happy to constantly be uprooted, roaming and living out of a suitcase, it feels strange to feel home sick and ache for the familiarity and comfort that I feel when Im with my family. I havent really experienced that until now. *Sigh* So, Im currently sitting in bed with a coffee and a book, and letting myself have a really (really), slow morning. Pre covid I was trying to ween myself off of coffee, but soy lattes are kinda like little warm hugs, so I will take them if it helps get through these next few weeks/months. Hahaha. 17.01.2022 PANCAKE MONDAY Fluffy clouds of deliciousness topped with homemade caramel apples. Breakfast has definitely been a little more extra than my usual porridge or smoothie bowls lately. Haha. I tried their vegan ice cream for the first time JUST before the 5km radius restrictions came into effect and Im dying to get more. 16.01.2022 BUDDHA BOWL Threw this simple buddha bowl together for lunch today and it was so yummy and nourishing. I tried the bbq jackfruit from @plantlifefoodco and had it with rice, roasted pumpkin, broccoli, hummus and hemp seeds - carbs, healthy fats and a little plant protein. The @plantlifefoodco jackfruit is definitely worth having at home in the pantry to add to buddha bowls, tacos, pizzas, sandwiches and wraps. Have you tried savoury jackfruit? 12.01.2022 DUMPLING NOODLE BOWL Threw this together for a really late lunch today. It kinda looks fancier than it actually is, because I cheated and used some pre-made vegan dumplings and made a super simple broth. I used vegan stock, ginger, garlic, Chinese five spice and a tiny bit of red curry paste (yeah, this is a fusion dish) and some white pepper to make the broth. Then I cooked these rice noodles in it and topped them with panfried dumplings, mushrooms, bok choy, spring oni...on and sesame seeds. My lunches have gone from real basic pasta salads and toast with hummus to delish warm meals now Im at home more. Anyone else cooking loads more while youre on lockdown? 11.01.2022 MESSY DELICIOUS Another shot of those deeeelish choc brownies I made the other week. I ended up making way too many of these, so I took 2/3 of them to work to feed my colleagues and they got the tick of approval. Yays. Apologies I havent been sharing much the past few days. Im not dealing so well with the news about lockdown being extended. Having such minimal social interaction and human connection since March is really getting me down. My meals have basically been avo... toast and granola with fruit the past few days, so not much exiting stuff to take photos of. How are all my fellow Melbournians going? Anyone actually thriving during this time? Im keen to know how you all are and what youre doing to keep your spirits high right now. Big hugs xx

11.01.2022 SOUP DAYS It's this time of the year I really struggle to eat raw, even smoothies and smoothie bowls. I took a big smoothie to work on Sunday and it took such a long time for my body to warm up again after I'd finished it. Sad face. Gotta start switching them up with more warming meals like this soup. We had organic pumpkin on sale on the weekend so I roasted a tonne of it up and made a big batch of pumpkin soup. It's the most basic soup recipe ever but it's tasty, nourishi...ng and warms you from head to toe. BASIC PUMPKIN SOUP Ingredients 720g Japanese pumpkin 1 cup Unsweetened plant milk 1/2 cup water 1 Stock cube (I used plant based chikn' stock cube from @massel_australia) 1/2 tsp turmeric powder Salt and pepper How to Preheat the over to 180'C Roughly cut the pumpkin into cubes or chunks and roast until soft* Add the roasted pumpkin, plant milk, water, stock and turmeric powder to your @vitamix_aunz or high speed blender and blend until smooth. Pour soup into a pot and heat on the stove before serving. *I don't typically cover my pumpkin with oil before roasting it but you can coat with a little olive oil and season with salt, pepper, garlic powder and onion powder before baking if you want to add extra flavour. Also, coconut milk or coconut cream would be a good plant milk to use for a richer/creamier soup. I served mine homemade, smokey roasted chickpeas and avocado toast. Noms. 08.01.2022 OAT BOWLS It's only in the past year or so that I've started liking oats. I don't know if there's any science behind it (placebo, mehbeh?), however, the oats I get from my work have a nice, chewy texture when they're cooked and for whatever reason I can eat those without feeling sick, but I can't eat quick oats without feeling so heavy in my stomach for half the day. Weird. I'm fresh outta oats and have to stock up at work tomorrow, so here's an oat bowl from the other day.... You can also blame my recent lack of posts on the weather gods. 07.01.2022 APPLE PIE OATS Had to change up my smoothie bowl for some oats yesterday, because it was so.dang.cold. I only found out tonight that it was snowing in the city yesterday, so yeah, now it makes sense why my bones were frozen for most of the day. These oats were definitely a good idea! I made my oats like usual (traditional oats and soy milk - none of that quick oat business), and added in around 1/4 of a cup of stewed apples, maple syrup, maca and cinnamon while it was cook...ing. Once it was done I topped it with @purecocobella yoghurt, apple and @honesttogoodnessau flaked almonds. Would have used pecans or walnuts instead, but I was fresh out. I honestly never used to like oats until I switched to traditional oats. The ones I get still have a bit of chew to them after theyre cooked (instead of being stodgy like I find quick oats to be). 06.01.2022 CHOC BROWNIE Found this really delish Swiss chocolate near my work the other day. It's so sweet and creamy I can't believe it's accidentally vegan. I used it in these chocolate brownies, and then drizzled all over with more chocolate. Nom. I winged this recipe and think I need to try it one more time before I have a recipe to share. 06.01.2022 How do you have your coffee? I asked you all on my story the other day how many cups you drink and most of you said 1-2, but I was quite shocked that so many of you dont drink it at all. How? Do you dislike the taste or dislike the affect you feel from caffeine? Im intrigued. I hardly drank coffee until I moved to Melbourne. Actually, I went from being an 18 year old that did a coffee course and bought a coffee machine, to drinking none at all for yeeeeeaaaaars (about 6 or ...more), to being a coffee lover. Im a soy/oat latte kinda girl and 100% preference @originalbonsoy @minorfigures @oatly and @happyhappysoyboy. Im very lucky here in Melbourne, the coffee is better than it is back home (soz, Perth) and theres SO many cafes, if someone is charging crazy plant milk tax I just go somewhere else. P.S. shot this at @kuujapanesecafe the other day. They make a good brew and I cant wait until lockdown is over so I can try some of their eats. #coffeetalk #coffeelovers

I recommend you all pop this cafe down on your list of places to grab a vegan feed from. The only regret is buying just three donuts, don't make the same mistake. 04.01.2022 CHOC BROWNIE Found this really delish Swiss chocolate near my work the other day. Its so sweet and creamy I cant believe its accidentally vegan. I used it in these chocolate brownies, and then drizzled all over with more chocolate. Nom. I winged this recipe and think I need to try it one more time before I have a recipe to share. 04.01.2022 OAT BOWLS Its only in the past year or so that Ive started liking oats. I dont know if theres any science behind it (placebo, mehbeh?), however, the oats I get from my work have a nice, chewy texture when theyre cooked and for whatever reason I can eat those without feeling sick, but I cant eat quick oats without feeling so heavy in my stomach for half the day. Weird. Im fresh outta oats and have to stock up at work tomorrow, so heres an oat bowl from the other day.... You can also blame my recent lack of posts on the weather gods. I cant get any shots in my house when its grey because its wayyyy too dark. Hope all you beautiful souls are having a nice weekend. 03.01.2022 STICKY DATE PUDS Hot sticky date pudding dripping with caramel sauce and big scoop of vanilla ice cream - you want? Im dropping this recipe for you below and I think youre going to love it! Ive been using @goodharvestau flour for my baking needs, because they use 100% responsibly farmed Australian wheat and donate to @ruralaid with every pack sold.... STICKY DATE PUDDING INGREDIENTS PUDDING 200g pitted dates, finely diced 250ml soy milk 1/3 cup butter (I used non dairy butter) 1 flaxmeal egg (1tbsp flaxseed meal + 3tbsp water) 1/3 cup brown sugar, firmly packed 1 1/4 cup of @goodharvestau self raising flour 1 tsp vanilla extract 3 tsp golden syrup 1 tsp baking soda CARAMEL SAUCE 1/4 cup butter (I used non dairy) 1/2 cup coconut cream 1 cup of brown sugar 1tsp vanilla extract 1/4 tsp sea salt HOW TO Preheat your oven to 180c Line 6 individual baking tins with baking paper (you can use onw square baking tin if youre not making individual puddings. In a small bowl, combine flax egg ingredients and set aside. In a small pot heat the soy milk until almost boiling. Add finely dice pitted dates into small pieces and let stand for 5 minutes. Sprinkle baking soda onto date mixture and leave for abother 5 minutes. Using a fork, gently mash the dates to break them into small chunks. You want the date mixture to be similar to a porridge consistency. Add butter and brown sugar to a mixing bowl and stir until you have a creamy texture. Gently stir in the flour before folding in the date mixture and vanilla extract. Pour pudding mixture into 6 individual pudding moulds or into a square baking dish. I lined a muffin tin to make 6 individual puddings. Bake for 20 minutes or until the cake feels firm and lightly springy to touch or a skewer inserted in thr centre comes out clean. CARAMEL SAUCE To make the caramel sauce add all the sauce ingredients (excluding the salt) to a small pot. Bring to a gentle boil for 15-20 minutes. The sauce will be golden and still a little runny. Take off the stove and stir in sea salt. To serve, place pudding onto a plate and liberally cover with caramel sauce and nice scoop of vanilla ice cream. #stickydatepudding #vegan @ South Melbourne, Victoria

03.01.2022 CHOC COATED PB BITES I love and hate that I come up with some really good recipes when I'm completely winging it. On one hand I'm like "uhhhyeah! look at me channelling that food wizard energy"; on the other hand I'm like "this is so good, but I bet I'm never going to be able to recreate this recipe as well again, even if I really try". 03.01.2022 ASIAN KELP NOODLE SALAD with chilli and ginger tofu and a tahini and lime dressing. I go through these phases where all I crave is this sort of salad full of fresh coriander, mint and Thai basil. Yum. 02.01.2022 BLUEBERRY BREAKFAST CRUMBLE You've probably all seen me throw some oats, dates and other things into my blender to make grawnola for my smoothie bowls by now. So good! A few weeks ago I decided to toast some of it and it was so golden and crunchy even though it is refined oil free. I heated up a bowl full of bluebs and topped them with some hot granola, strawberry yoghurt and walnuts. Honestly more like dessert than breakfast. I added some medicinal mushrooms to this batch... of granola to help boost the immune system and help reduce stress. I'm such a big fan of medicinal mushrooms and all their incredible properties. Actually, the entire fungi world is so amazing! Recently I've been learning about mushrooms that digest and breakdown plastics and could be used to help fight our war on plastic pollution - very cool. 02.01.2022 BANANA CHOC SMOOTHIE BOWL Thanks so much to everyone that asked questions about raw veganism. I really love that way of eating. When the weather is warm, I naturally crave juices, smoothies, salads and lots of fruit and Ill definitely get back on the raw wagon when it warms up a little more her in Melbourne. This is one way you can eat raw at breakfast (or for a snack, dessert or if you want something sweet for dinner). 02.01.2022 HEDGEHOG SLICE COOKIES Well, these cookies were a complete fluke! I accidentally spilt a third of the cookies I needed for a hedgehog slice all over the stovetop and didnt have anything else I could substitute it for I tried setting them the slice in the fridge as is, but the slice mixture was way too sticky, so I decided to turn them into cookies. Theyre flipping delish!. Its like a hedgehog slice, brownie and cookie all in one. Dayyyym friends. I wrote down some ingredients while I was making the hedgehog slice, and then abandoned my recipe notes when I started turning them into cookies. Please pray to the baking gods for me. Ask them to allow me to recreate these in the very near future, because youre all gonna wanna try them! #vegancookies

02.01.2022 SOLACE IN NATURE I've always found connecting with nature to be the best remedy for healing and inducing inner-peace. Exploring the Southern tip of Western Australia was so incredibly magical - photos don't do it justice. Being absorbed by the stunning scenery gave me the opportunity to find so much beauty admists life's recent challenges. If you're a West Coast baby like me and haven't explored much past Margaret River (or planning to visit Western Australia) please do y...ourselves a favour and drive a little further for this, you won't be disappointed. 01.01.2022 SEED CRUSTED PUMPKIN Lockdown 4.0 here in Melbourne and I'm already getting into the iso-baking. Yesterday I baked an apple crumble cake for my colleagues and then made up this for a late lunch (and kinda meal prep for others meals). I made up a basic kale, broccoli, mint and quinoa salad and topped it with a seed crusted pumpkin and lime-tahini dressing. I've started reading about "seed cycling", which is basically incorporating different combinations of seeds into your di...et during certain phases of your cycle for better hormonal and menstrual health. I don't to know what actual research there is to support this but either way, seeds are nutrient-powerhouses and good to incorporate into our diets. This seed mix had sesame, pumpkin, chia, sunflower seed and a few spices. I hope you're all going as well as can be #isobaking #vegan #glutenfree
