17.01.2022 Weber SmokeFire cook-up session number two today. Kicked off with dessert pizza, custard base with banana, maple syrup, strawbs & crumbled flake (yummo). Then d...ropped temp back to 190C for roast chook & veggies (80 mins). Great smoke flavour, super moist meat & crispy skin - very evenly cooked. Menu was bacon & egg rolls, stir fry veggies & scotch fillet steak using the GBS sear grate, wok & griddle...I love my job! 09.01.2022 Part 3 today of the new Weber SmokeFire cook-ups with low & slow ribs on the menu. 6 racks of pork ribs which we cooked for total of 4 & 1/2 hours on the EX4. Moist, tender with an amazing depth of smokey flavour. 30 mins in SmokeBoost mode, then 120 degrees for 2 hours before wrapping in foil for 1 & 1/2 hrs and then baste unwrapped for 30 mins. Only used around a quarter of a bag of pellets, so super efficient on fuel & held temp perfectly all cook.
