The special times to catch up with so many friends within the hotel and in Port Douglas. A massive thanks to Spencer & Reina For again inviting me up to the #chefsinparadise ..To all the staff kitchen and front of house and Wine Guru thank you for hitting 95% What a night and to all the people that gave up their Friday night. Last but not least what a enjoyment and pleasure to work along the great chef Philip Johnson respect , so much fun without ego and you are a true legend. 17.01.2022 So many great things are on the boil and one is my new website I was born in a world where this never mattered and I always thought it unnecessary or a little overwhelming to embark on constructing. Thanks to @socialsetmedia for listening to my ideas and shaping up how I wanted to be represented in the digital world which was so foreign to me. We have more to add re upcoming events and current projects but just couldn't wait any longer to set it live. 17.01.2022 Tortellini Prawn, Ham, Pineapple, Rancid Ham Vinegar, Mark 2 @noosa_waterfront_restaurant @noosafoodandwine #Primomanifesto Secrets of great Pasta The pasta should have a bite, the pasta should just be thin enough to hold the filling, so you taste the filling then the pasta , Here is my recipe #recipe The Perfect Pasta 800 grams 00 Flour 5 Free Ranged Eggs 7 Free Ranged Egg Yolks 2 tbsp of High Alcohol Vinegar ... 3 tbsp Olive oil Pinch of salt 0.3 grams saffron ( 3 mls of saffron water ) if needed Method Place the flour in a robot coupe, switch it on, slowly add the eggs, yolks, Thru the whole in the top of robot coupe lid, when all the egg has been incorporated , add the olive oil, Vinegar , salt, mix in.( add the saffron water if not using fresh free Ranged eggs. Remove the pasta dough from the machine, knead a few times to make sure the dough is mixed well on a floured surface , cover with plastic wrap, rest for a hour or more before rolling, Note ( if using saffron place in tinfoil, and roast in a 100 f oven for 5 / 10 minutes until fragrant )#hotmixpro

08.01.2022 It's all Disney, Attention to detail : Its a minor detail that an audience probably wont even consciously notice. But with this extra effort, the filmmakers ensured that an animated rabbit interacting with real life was still completely believable to the audience watching. It kept the audience within that world and gave them one more subconscious reason to believe. Its a single minor detail that made that experience so much better.The shadows where added in to give it life... . This moment would earn its place in the very fabric of Disneys customer experience ethos and create a core question that would be asked of every Disney creation from that day on:Why Disneyland : It's all about attention to detail, Do you know the park actually starts 1 hour before opening , they Cook food to get the smell in the air , and all the characters warm up, so that when the first customers come thru the gates, it feels like it's never been closed, and then at night the lights and rides never stop until the last car is out of the car park, so people never see it closed, these are the little details, that make Disney Special, like the hospitality it's lots of little things that make a place special , it's not all about the food, Service , it's about expecting the customers needs.
