22.01.2022 This Tim Tam tart is delicious! INGREDIENTS 2 x 200g pkts dark chocolate Tim Tams 35g butter, melted, cooled... 300ml double cream, whipped to soft peaks Dark cocoa powder, to serve MILK CHOCOLATE GANACHE 400g milk chocolate, chopped 250ml (1 cup) thickened cream 50g butter 1 teaspoon vanilla extract 1/2 teaspoon sea salt flakes DARK CHOCOLATE GANACHE 150g dark chocolate (70% cocoa), chopped 50g butter METHOD Step 1 Grease a 2.5cm-deep, 11 x 35cm (base measurement) fluted tart tin with removable base. Process 300g Tim Tams in a food processor until finely crushed. Add the butter and process until combined. Press the mixture over the base and sides of the prepared tin. Place in the freezer for 15 minutes to set. Step 2 Meanwhile, for the milk chocolate ganache, combine the milk chocolate, cream, butter, vanilla and sea salt in a microwave-safe bowl. Microwave on High, stirring every 30 seconds, for 1-2 minutes, until melted and smooth. Set aside for 5 minutes to cool. Pour over the tart base. Place in the fridge for 2 hours, until just set. Step 3 To make the dark chocolate ganache, place the dark chocolate and butter in a microwave-safe bowl. Microwave on High for 1 minute. Stir until melted and smooth. Set aside to cool slightly. Pour over the milk chocolate ganache and spread to the edges. Place the tart in the fridge for 15-20 minutes, until set. Step 4 Cut the remaining Tim Tams in half diagonally to make shards. Carefully remove the tart from the tin and transfer to a serving plate. Top with whipped cream and Tim Tam shards. Dust with cocoa. RECIPE NOTES You can make this tart up to 3 days ahead to the end of Step 3. Store in an airtight container in the fridge. For a flavour twist, try using other Tim Tam varieties instead of dark chocolate, such as choc mint, salted caramel & vanilla or milk chocolate.

INGREDIENTS 1/2 cup (70g) custard powder 1/2 cup (115g) caster sugar... 1 cup (250ml) cream 2 cups (500ml) milk 1 teaspoon vanilla essence 225g Arnott's Sao original crispbreads (28 biscuits) 1 1/2 cups (230g) pure icing sugar 2-3 tablespoons passionfruit pulp METHOD Step 1 Place the custard powder and caster sugar in a saucepan. Add enough of the cream to make a smooth paste. Step 2 Place the saucepan over a medium heat. Gradually add the rest of the cream and the milk, mixing until well combined. Stir constantly with a wooden spoon until the mixture boils and thickens. Remove from the heat. Stir in the vanilla essence. Cover the custard with plastic wrap. Cool. Step 3 Spread a heaped tablespoon of the cold custard on a crispbread. Top with another crispbread. Transfer to a tray. Repeat. Chill for 30 minutes. Step 4 Sift the icing sugar into a bowl. Add enough of the passionfruit pulp to make a thick icing. Spread each slice. Allow icing to set.

Spray the chicken with olive oil spray. Cook for 4 mins each side or until golden brown and cooked through. Transfer to a plate and cover with foil. Set aside for 5 mins to rest. Step 2 Prepare the salad kit in a large bowl following packet directions, reserving the dressing. Top with the avocado. Drizzle with half the reserved dressing. Step 3 Cut 1 lime in half. Drizzle over the salad. Cut the remaining lime into wedges or cheeks. Step 4 Divide the chicken and salad among serving plates. Drizzle with the remaining dressing and sprinkle with coriander. Season. Serve with lime checks.
