13.01.2022 Yum, lunch is served. These stuffed capsicums are great to eat with your favorite salad or they go amazing as appetizers at parties. Recipe: Stuffed mini red capsicum In a saucepan prepare 1 cup of either rice or quinoa to packets instructions, set aside. Cut tops of capsicum off and remove all seeds, put the lids aside as you will reuse these later.... In a bowl add, pre cooked quinoa or rice, 40grams Finely diced yellow & red capsicum, 2 tbs finely diced shallots, 20 gram finely diced red onion, handful chopped coriander, 3/4 cup spiced cashew cheese*, crack pepper to taste, thoroughly combine. Spoon out mixture and press firmly into capsicum shells, once full, add the lids back on top. You can keep these raw or put them into the oven for 15 minutes @ 170 for a warmer dish. If your mini capsicum look more medium size, double the quantities so you have enough to fill capsicums. 07.01.2022 Its zoodle time again. Yum. I served it today with my version of Alfredo sauce. Recipe: zoodles with Alfredo sauce 2 large zucchini spiraled into zoodles, 6 semi dried tomato cut in half, handful pine nuts, 2 asparagus stems cut into bite size pieces, 1 cup lightly blanched broccoli heads, 6 cherry tomatoes cut in half, salt pepper to taste.... Sauce: In a blender add 2 cups raw cashews, 1.5 cups filtered water, 1 tsp roasted garlic, 1/4 tsp cayenne pepper, 1/2 red onion, 1/4 tsp cumin, 1/4 tsp herb salt. Blend on high till there are no lumps and is a smooth creamy consistency. In a bowl add all ingredients and 4-6 tbs cashew sauce, thoroughly combine, garnish with avocado and chili flakes. Sauce will last 1 week in fridge or can spread on dehydrator trays and dehydrate for 12hrs @ 105 to make cashew parmesan cheese.
