25.01.2022 Hot weather bake hacks paid off! Loaves available from the Baw Baw Food Hub from 12pm
25.01.2022 I’m dreaming of winter baking... It’s super hot in the kitchen this morning and I had to move very quickly when shaping last night to make sure the dough didn’t overproof. Phew! Give me the slow pace of winter sourdough anyday. Luckily the loaves are looking beautiful - they will be available from 3pm at the @bawbawfoodhub in their new Queen St location.

14.01.2022 Yesterday was way too hot to be making bread, but needs must! Here are some things I recommend you do to make sure you don’t end up with flat, sour bricks when making sourdough on hot days: 1. Make your levain with minimal introductory starter - I used 1tsp of starter to make 3kg levain - mixed before bed and the whole lot was ready to use in the morning. 2. Skip the autolyse (this is for if you add the starter at autolyse like I do). Adding salt straight away tempers the st...arter’s enthusiasm. 3. Whilst we’re on salt, feel free to add a touch more than you usually would, within reason of course. Salt is a retarding agent. 4. Mix with chilled water. 5. Lower your hydration - this decreases permeability of starter and slows fermentation . 6. Bulk ferment in the coolest room of your house (I can’t mix or shape somewhere cool, but I can move the proving dough for the bulk which helps to slow things down). 7. Final proof in the fridge and feel free to turn the fridge down a notch from its normal level. Bonus tip.... if you can, just wait for a day with weather under 30 degrees to make bread.

13.01.2022 First bake in the @challengerbreadware Challenger Bread Pan by @jimchall. Super impressed. This thing is heavy duty and will last generations. Whilst many bakers opt for the Lodge combo cooker or household cast iron Dutch oven, neither are an optimal baking tool. They do the job but you risk burning your wrists whilst lowering bread into their depths, you’ll discolour the enamel at high temps and potentially melt handles on some model. Pots also aren’t suited to baking things like baguettes. This tool is purpose made for bakers and the results are as good as what I’m getting out of my Rofco, perhaps better as there are no hot spots. It’s ergonomically sound, steams the loaf well, promotes excellent oven spring and develops a perfect crust. Thanks Jim for developing such a stellar tool for home bakers!

I was inspired by something similar done by @barborabareticbakery (and I only wish I had her immense photography skills). I’ll let you know how it turns out

09.01.2022 Sourdough starter is incredibly resilient... Brian from Western Australia purchased my iso sourdough kit and I dutifully express posted it, thinking it might take 3 days or so to reach him... FOUR WEEKS LATER it arrived and I held no hopes for the starter. It was going to be dead, for sure! I coached Brian through some things we could try to just see if the starter held any life and low and behold, look what happened! Swipe across to marvel at Brian’s first ever loaf of sour...dough. I’m now posting starter kits with much greater confidence - if starter can survive a 4 week journey across this great southern land, I reckon it can survive a journey anywhere. 08.01.2022 Khorasan doughnuts with creme pat and Sunny Creek Organic raspberry jam. I did an overnight proof on these but they did contain yeast - now I know I can fry a doughnut, I’ll be trying the sourdough variety.
07.01.2022 Before baking, I made a deep cut down the centre and filled it with vintage cheddar, jalapeños and black sesame seeds. Should be tasty!
