25.01.2022 Something a little different. We have been doing a bit of restoration work to our home. Finally got around to getting the paint off of the Lintels in the 100 plus year old stone cottage. With a lot of work (& mess ) we have exposed the beautiful Red gum hidden beneath layers of paint.... How good does it look!!

19.01.2022 Do you soak your dried beans or lentils? . . Lots of people say its not necessary that they cook through just fine without soaking. . . Well yes of course they all eventually cook through but thats not the reason I soak them.... . we soak them because they are like a million % easier to digest when theyve been soaked for at least 12 hours. . Make sure you soak all your legumes for 8-24 hours (rinsing and using fresh water after 12 hours of soaking longer thank 12 hours) and then cook like you normally would. See more

12.01.2022 Just wanted to share another treasure our home has revealed. Took these door latches off while painting to give them a clean up and fresh cost of paint. Only to find their beautiful brass details!! Certainly wont be painting them again they are now both free of paint and back in place. Now to tackle the rest of the doors!... How nice are they?! Ah its the smallest things that can bring joy sometimes.

06.01.2022 Only 6 sleeps so thought we re-share our delicious Fruit Mince Pie recipe!! We are stocked up with our organic dried fruit mix (includes Diced Figs, Diced Apricots, Raisins, Sultanas, Cranberries) This wholesome Christmas classic is a must do this year! Xx SPELT FRUIT MINCE PIES... INGREDIENTS FILLING: 2 cups mixed fruit (Sulphur free) 1/2 cup dates chopped and seeds removed 1 tsp orange zest 1/2 cup shredded coconut 1 tsp ground ginger 1 tsp ground cinnamon 1 tsp vanilla essence 1 bud of star anise 1/2 cup water INGREDIENTS PASTRY: 300g sifted spelt flour (or buckwheat flour for gluten free option) 3 Tbs coconut sugar 1 1/2 tsps ground cinnamon 125g cold salted good quality butter, cut into rough cubes 1 large egg 50ml cold water METHOD For the filling: Put all the ingredients for the filling into a bowl and mix well. Cover & place in the fridge Ideally a day or so before to let the flavours infuse. METHOD PASTRY: Add the flour, coconut sugar and cinnamon into a large mixing bowl. Add the butter and work it into the flour mixture using your fingertips (it should look fine and crumbly in texture once it’s ready). Next add the egg and water to the mixture and gently mix until it comes together and forms a ball of dough in the bowl (don’t overwork the dough as we want it to stay nice and short in texture and not chewy and tough). Lightly flour a smooth work surface (I like to use a large piece of baking paper on my benchtop) and place the dough ball onto it. Roll the dough out to about 3 or 4 mm thick. Cut the dough into rounds with a cookie cutter (or a Fowlers preserving jar lid works well too!), big enough to fit inside a patty pan tin. You can re-work and roll dough to cut out stars for the top if needed. ASSEMBLE: Scoop about a tablespoon of the filling (watch out for the star anise! - try and find them and remove them!) into each case. Top with a star. Bake at 180 for 15 to 20 minutes or until edges are browned. This makes about 12 cupcake-sized pies.
