Whilst we praise everyone in the coffee value chain daily for allowing us to enjoy the beloved caffeinated beverage, today is a day intended to celebrate those people. Take the time today to reflect on the connections your coffee has made in the journey to your cup: farmer and their communities to importer/roaster to retailer/wholesaler to barista/sales person and finally to the consumer.... It’s inspiring that such small beans can forge such powerful connections across the entire globe! 2020 has been an incredibly tough year for those in the coffee, in particular for younger generations who make up significant numbers in the chain. We encourage you to check out internationalcoffeeday.org and join the discussion in ‘Coffee’s Next Generation’ initiative, where the ICO are hoping to drive youth engagement back into the coffee sector. 08.01.2022 I thought I would geek out about the roasting process a little. Just to explain the key phases and what this means for overall results in the cup. First phase is below, enjoy & keep caffeinated - Scott ROASTING PHASES: 1 (green) All beans start here. The roaster needs to decide on a temperature to begin the roast (charge temp).... Too high and you risk scorching the beans, too low and you risk stalling the roast which gives you underdeveloped flavours (think flat, cardboard-ish, grossness). Determining the right charge temp is based on how dense the bean is, how much water it has in it, and what type of roast you want (for filter or espresso etc). IMO this is the most crucial phase, the decision you make here ultimately decides the fate of the roast!

05.01.2022 Thanks to our friends The Packaging People we are now sending awesome coffee in equally awesome, compostable, post packs! These can be added to your home compost (conforming to AS5810) or check with your local council if they can be added to your green bin. There will be a small period where you might receive the old, non compostable, post bags as we transition to the new ones.

03.01.2022 What better way to start the week than with another roasting process geekout. Happy reading, stay caffeinated - Scott ROASTING PHASES: 2 (yellow) A few minutes after starting the roast, yellowing occurs. This is the first visual indicator of the roasting process, as sugars react with amino acids to create a non-enzymatic browning (known as the Maillard reaction).... Interestingly, the smell at this phase is similar to fresh baked bread but don’t let this fool you into thinking it would be tasty. Beans at this point taste like grass/hay! With the roast being at full power pretty much up until this point, water inside the bean is starting to be driven outward. The roaster needs to make some critical decisions (air intake and heat level) to ensure the energy in the bean mass doesn’t rise too sharply. At this point is where I start to look to crafting the sweetness and aroma compounds.
02.01.2022 Our last batch for 2020! It’s been an interesting year to say the least with our share of both challenges and triumphs. We could not have made it through without the support of our customers (both cafes and individual) and we are very grateful to you all. FUN FACT: we helped coffee lovers enjoy more than 74,000 cups of brew this year ... I hope that your end to the year is safe and full of happiness.
