19.01.2022 Chicken & Vermicelli Soup This is a recipe I found in the Goulburn Cookery Book, 32nd edition (so late 1920s). I halved the original ingredients so: 1 1/2 litres chicken stock, 3oz (about 100g) vermicelli (rice noodles), yolk of 1 egg, 1 tblsp cream, 1/2 head celery (5-6 stalks). Put stock, thinly sliced celery and vermicelli (broken into short pieces) into saucepan. Simmer 30 mins. 'Just before serving, thicken with well-beaten egg yolk, which must be mixed with the cream... and the stock poured gradually over it. Return to saucepan, and stir till the mixture thickens but on no account let it boil, or it will curdle.' I quite liked this soup which had a subtle flavour. I added a little extra cream and some cracked pepper when serving. Hubby and son weren't all that excited but they like things quite spicey! I used rice vermicelli which complemented the subtle flavours but research suggests that you could also use thin spaghetti & this may be what was intended...I was a bit surprised about such an old Aussie cookbook having either as an ingredient...what do you think??
