05.03.2022 - Rosalie Kunoth-Monks OAM died peacefully in Alice Springs hospital on 26 January, surrounded by her family. Ms Kunoth-Monks shot to stardom as a teenager when she became the first Aboriginal woman to play a leading role in a feature film Jedda (1955). Directed by Charles Chauvell, it was the first Australian movie to be shot entirely in colour and the first to be screened at @festivaldecannes.... Despite her fame at the time, #RosalieKunothMonks turned away from the limelight and became an Anglican nun in Melbourne where she served for ten years, before leaving to continue her advocacy work. In 1993, Rosalie Kunoth-Monks was recognised for her advocacy, with the Medal of the Order of Australia and again in 2015 when she was named #NorthernTerritory Australian of the year. Rosalie Kunoth-Monks is survived by her 5 children and 19 grandchildren. A memorial service to celebrate a remarkable life is being planned for Alice Springs, before Ms Kunoth-Monks is laid to rest at a private burial on country at Utopia. Repost from @nitv_au

But first, why don't we get to know our guest judge a little more...... Tell us about yourself Jo "I have been a chef for 14 years. I have always loved cooking and from a very young age knew I wanted to spend my time in the kitchen. For the last 5 years I have been cooking at Oakridge Winery in the Yarra Valley as Co - Executive chef. As a young chef I cooked in Canada and New Zealand before returning to Australia to train as a baker and pastry chef. I am a produce driven chef and cook from my local surrounds and kitchen garden." If you werent a chef, what would you be doing? "A farmer growing food; fruit and vegetables or a florist" Name a career highlight in your journey so far: "I have loved so many aspects of what I get to do and what I have been exposed to with being a chef. Representing Australia and competing last year in the World Trophy of pastry was an amazing experience." In terms of local produce, what are you loving right now? "I love spring and the change of season. Watching the garden change and blossom is a sign winter is done. This time of year I love making cheese from the local milk in the Yarra Valley. The flowers & clover that pop up in the lush grasses make for fatty full flavoured milk for cheese making. " Whats your favourite native Australian bush food to cook with and why? "It is hard to pick one however I love Davison Plum. I love the intense flavour & colour. It is versatile in both sweet and savoury applications. Its natural sourness is amazing for balancing dishes and providing a unique flavour. I also really love Geraldton wax. Students, teachers & parents have come together to raise funds for the community of Utju & Areyonga School by completing a virtual walk from CCGS in South Yarra to Utju, Northern Territory. Just a short 2588km (whoa!) stroll, travelling through Adelaide before heading up through the centre to Alice Springs and then making their way out to Utju.... It may not be the same as heading to Areyonga for our usual September school holiday program with the Grade 6 students of CCGS however, we are grateful to stay connected during this time & learn about our country along the way. It was a school holiday program and we had decided to paint a huge mural on the wall of the Sport and Recreation Stadium for the whole community to be involved in and enjoy (it is still there to this day, see pics below) A team favourite during these programs was to al...so visit the @Merrepen Arts gallery located within the community where they showcase stunning artwork from locals like Kieran. 12.01.2022 October-November Community Cook Competition // Red Dust along with AustSuperfoods & our guest judge Hugh Allen will be on the look out for our next budding community cook with Hugh's Marron "Curry" featuring Native Australian Freeze Dried Finger Lime and Mountain Pepperberry. But first, why don't we get to know our guest judge a little more...... Hugh's been been the executive chef at Vue de monde in Melbourne since 2018. If he wasn't a chef he'd be a painter, photographer, or graphic designer. When he's not cooking up epic degustations at Vue de Monde, his favourite thing to cook is chicken parma! (Hint: Could chicken be the protein you feature in your curry dish?) This month we are wanting you to get creative in the kitchen and adapt Hugh's five star dish using a protein of your choice How to Enter? Simply recreate Hugh's Curry using a protein of your choice. Strawberry & Lemon Myrtle Dodgers - YES PLEASE INGREDIENTS: Biscuit 250g Plain Flour110g Icing Sugar (powdered sugar)200g Butter softened2 Egg Yolks1 Vanilla Pod, de-seedPinch of Sea Salt Filling 300g Strawberry Jam1.5 Tsp Lemon Myrtle Power METHOD: Using a stand mixer fitted with a paddle, cream the butter, vanilla seeds and icing sugar until pale and fluffy. Add the flour and yolks. Mixing on a low speed to form a sough, for about 2 minutes. Shape the dough into a flat disc, wrap and refrigerate.The pastry is high in butter so it will be very soft. It is important to chill the pastry for at least an hour. Remove the pastry from the fridge and allow to rest at room temperature for 15 minutes. Roll the pastry out on floured greaseproof paper until it is 1cm thick. Cut pastry into circles (10cm in diameter), than with a cutter of your choice, cut the centre out of half of the circles, 50% will be bases, and 50% will be the tops.Pop into the fridge for 30 minutes. Preheat the oven to 170 degrees. Remove the biscuits from the fridge and place into the oven. Bake for 12 15 minutes until golden brown and cooked through. The tops will be cook quicker than the bases. Once cooked remove from the oven and cool before removing from the baking trays. Whilst the biscuits are cooling, mix the Lemon Myrtle into the jam. Spread the strawberry and Lemon Myrtle jam over the base biscuits and sandwich together with the top. Sprinkle with a little icing sugar and more Lemon Myrtle. Enjoy!

11.01.2022 Sunday Music Session takes place in Utju // The lead up to this trip began many weeks ago with Utju being the first community to participate in Red Dust's remote learning music program delivery model due to the COVID virus & border closures. Abraham and Stephan had been zooming weekly with Red Dust to begin the song creation process. However, a few weeks ago the Bio security lifted for remote communities in the NT and the opportunity arose for NT based staff to pay Utju a ...visit in person. The week began with the band jamming and recording 5 songs in a studio set up in the school, eventually working on one of the songs that had been developed through the remote delivery project. Stephan, Melvin, Dickie, and Ephram among others all played on the song with many others contributing in other ways throughout the recording process. The song was then further developed by senior Unity College students currently at Areyonga School and some former students in the community also getting on board to write lyrics and record vocals, even incorporating local members of the famous Central Australian Aboriginal Women's Choir. The whole project was very much community driven with Abraham playing a primary role in producing the song and mobilising the community around the project which is evident in both the song and the video. The song is about how communities look after each other and keep each other safe and whilst it does not explicitly mention Covid19, the song is inspired by recent events and talks about keeping communities safe from within and the need for everyone to listen and work together in Utju to stay safe. Some truly incredible local musicians are featured here with a stunning backdrop, so while we can't all be there in person right now, we can in spirit & it was amazing to get our feet back on the red dust. 10.01.2022 A massive CONGRATULATIONS to the Year 6 & Year 5 students, teachers and parents of Christ Church Grammar School with their Walk with Red Dust 2020. It was a huge success having completed a whooping 3,149 km's walked, which not only saw the group reach the community of Utju in record time, but looks like they are making their way back to CCGS Sth Yarra as well. :-) The goal was to raise $3,000 to go towards special projects and excursions for the students of Areyonga Schoo...l and well what can we say..? CCGS ended up smashing that goal and doubled it raising an impressive $6,014.26. Although the virtual walk will never compare to being able to interact on a personal level with the communities, this year has been anything but normal and we value any connection we have been able to achieve. With a background in bread and pastry from Tivoli Road, and kitchen experience from Movida and Long Short Café, she leads the Oakridge Kitchen as Co-Ex...ecutive Chef. Drawing inspiration from Australian native ingredients and the natural beauty that surrounds her at Oakridge, Jo strives to minimize waste, employing creative methods to get the most from every ingredient. Industry critics and peers have recognised Jos commitment with a string of hospitality awards, including 2018 Women in Food Service Chef of the Year. Jo has had a couple of stints as guest chef on MasterChef and in 2019 Jo represented Australia at the 2019 World Championship (Olympics) of Pastry in Milan. She showcased Lemon Myrtle to the media in Milan and entered an extraordinary Emu into the event. So much of what we do is with the children of the communities we visit. It is their strength and culture we witness each day and the impact that storytelling, family, culture & resilience can have on the next generation.... What can you do to celebrate? Your workplace, school, local community or family home can host a morning tea, BBQ, sports day or afternoon of fun activities. We know that Covid may prevent some of these activities from happening, however if you are at home, grab your kids and have a fun day celebrating them & your culture. Powerful words back then and words we can live by during these unprecedented times.... The song Wakai (which has reached an astounding 96,000 views on You Tube) was created during one of our 3 day Strong Young Women's programs along the river crossing at Tipperary Station. Three days on country yarning, fishing, yoga, art therapy, sleeping under the stars and creating this beautiful song. We would like to acknowledge our music team Wayne & Steve, Maddie from Red Cross, Bridget Kikitin, Troy & Dylan from the clinic & the Strong Young Women from the community of Nauiyu who wrote the lyrics and cherographed the music clip.
