25.01.2022 Wind, rain, thunder, lightening....hail! Soup season has definitely arrived....warm up with our aromatic Master stock Chinese Chicken Soup infused with star anise, cinnamon, ginger, garlic....also brown rice, cabbage, fresh chilli and scallions....



24.01.2022 I had another great day working at the Opera House with Aria Catering. Love all that I am learning here in the pastry section...thermometers, chocolate tempering, agar, glucose, pectin, citric acid... Below are pictures of the Espresso Panne Cotta that I made....the triangular shards made from cinnamon crumble which is then pressed into little pyramids, baked in the oven, then dipped in white chocolate and then finally sliced in these effective 'shatterings'.....

Mexican Red Bean Chilli..spicy braise of red kidney beans (excellent source of protein, naturally low in fat, good source of fiber, vitamins & minerals), zucchini & red capsicum, finished with fresh parsley & coriander from OUR new flourishing herb garden (love saying that - 'our herb garden'!!). Now conveniently packaged in 400g as well as 750g. My supper tonight with garlic roasted sweet potatoes and sour cream (light of course)...
