04.01.2022 We're putting a healthy spin on our take-away favourites. First up - vegetarian 'fried rice'. We've switched out the rice for quinoa because it has twice the protein and 5 x the fibre (based on 1 cup) so it's an easy switch to accumulate those daily nutrients. Then we've chosen some fresh crunchy veggies, garlic and ginger but the secret is - be selective with your ingredients to avoid crowding the pan - less is more. Give it go and let us know what you think. Ingredients...: 2 cups cooked Red Tractor ‘Golden White Quinoa’. 1 Small Capsicum (Finely chopped). 5 White Cup Mushrooms (Sliced). 1 Small Broccoli (Chopped). 1/2 cup Green Peas. 1-2 Medium Carrots (Finally chopped). 2 Spring onions (Chopped). 3 Tbsp Soy Sauce. 2 Tbsp Sesame oil. 3 Tsp Minced Garlic. 2 Tsp Crushed Ginger. Method: 1. Cook quinoa as direction on packet and set aside. 2. Heat a large pan over medium heat. Once heated, add sesame oil, garlic and ginger. Cook for approximately 1-2 minutes or until fragrant. 3. Add remaining vegetables (expect spring onions) and 2 Tbsp soy sauce. Cook for another 5-7 minutes or until vegetables have slightly softened. 4. Add cooked quinoa, spring onions and remaining soy sauce Stir/cook until well combined. 5. Enjoy! See more
