Big thanks to Shahzadi for sharing her recipe with us! #refugeevocies #homecooking #celebrateculturaldiversity Peshawari Chapli Kebab 500g minced beef or lamb or meat... 2 medium onions finely chopped 1 large tomato finely chopped 1 small green chilli finely chopped (optional) 1 tablespoon fresh coriander finely chopped 1 teaspoon salt 1 teaspoon ground cumin 2 teaspoons ground coriander 1 teaspoon ground pomegranate seeds or teaspoon pomegranate syrup (optional) 1 teaspoon crushed garlic 2 teaspoons plain flour In a large bowl, mix onion and mince together very well for about 5 minutes. Add the rest of the ingredient and mix well. Wet your hands and take a tennis ball-size amount of mixture and roll between your hands into a smooth ball. Flatten the ball by pressing firmly between your palms. Heat 2-3 tablespoons of vegetable oil in a frying pan. When the oil is hot lower the heat and fry the kebab on both sides until cooked through. Serve in a hamburger bun with a lille salad and a good dollop of mint yoghurt sauce (chopped mint stirred through thick plain yoghurt).

Saif has been denied permission to see his wife (who lives in community detention) multiple times while she’s been in as out of hospital undergoing surgery. As a result of this ongoing torture, Saif attempted to take his own life last month. This kind of treatment of Saif is absurd. 07.01.2022 This week's recipe evokes childhood memories for Andrea Jacob, watching her grandmother's nimble hands put together this rustic apple pie in her sunny kitchen in Hungary. #homecooking #hungarianapplepie #refugeevocies #newbeginnings #childhoodmemories #grandmascooking #familyrecipes Apple Pie from Hungary... Dough 30g sugar 200g butter, cold and roughly chopped 370g plain four 1 egg 1 pinch salt 1 teaspoon vanilla extract 1-2 tablespoons cold water Filling 1.5 kg apples, core removed and grated (keep peel on) 1 teaspoon ground cinnamon 1 teaspoon ground cloves juice of 1 lemon In a food processor, combine all ingredients to make a dough, adding the water one tablespoon at a time until the dough comes together. Alternatively, you can rub the butter into the dry ingredients before adding the wet. Cover the dough and rest in the fridge for about 30 minutes. In the same food processor, use the grater attachment and grate the apples. Use whatever apple you like to eat or a mix of sweet red ones and sour green ones. If you don't have a food processor, use a grater and grate by hand. In a large saucepan, add the grated apple, spices and lemon juice. Simmer over medium heat for about 10 minutes, stirring occasionally. In a large sieve or colander, drain the apple mix. Keep the liquid and enjoy a nice drink, add it to a smoothie or a bowl of muesli). Preheat the oven to 180. Remove the dough from the fridge and cut into two equal portions. Roll out one portion on baking paper, then carefully lay it all into the bottom of a 30 x 20 cm rectangular tin. By keeping the rolled dough on the baking paper you don't need to worry about greasing your tin! Spoon the strained apple mixture onto the bottom layer of the pie and spread it out evenly. Roll out the second half of the dough on baking paper. Roll the dough onto the rolling pin and gently place it over the top of the pie, unrolling it as you go. Use your finger or a fork to push the edges together. This is a rustic pie, so no need to make it look perfect. Brush the top with some water and sprinkle with some sugar or a mixture of sugar and cinnamon. Using a fork, prick some holes in the top to allow the heat to escape while it’s cooking. Place it into the preheated oven for 30-50 minutes or until the top is golden. Let the pie cool in the tray. Once cool cut into squares and enjoy with cream. As an alternative you might like to try it with yoghurt, sour cream or coconut cream.

But everyone says that nothing has changed and the government still has a lot of power. Is that true ? For me and those who are still in the detention, it is true that nothing has changed . The honorable people of Australia: you have shown your generosity and strength in the face of this oppressive government. You honorable Australian people, standing on the street 24 hours a day months in front of the KP motel. You came out in the heat and cold, day and night. Dancing, singing and protesting against this absolute injustice. I know this is the tradition of the world, I know it is the rules of the world that some people suffer and some live comfortably, and some just watch, while others are dissatisfied with injustice and trying to correct it. But how do these laws get approved and thus destroy people's lives? I want to say that every person who speaks up can change our situation. So my message is do not despair and I ask you to fight with more energy and better strength to end this torture of the government.
