Including veggies in your snacks is a great way to boost your vegetable intake, helping you reach the recommended 5 serves each day. One snack I often have on hand is Zucchini, Carrot and Apple Bread - it tastes great and freezes well so I can make a loaf and just pop a piece in the toaster when I’m feeling a bit peckish. This recipe is adapted from One Handed Cooks - Bo...osting Your Basics by Allie Gaunt, Jessica Beaton and Sarah Buckle. Ingredients: cup olive oil 1 egg (or chia egg- 1 tablespoon chia seeds with 3 tablespoons water) cup milk with 1 teaspoon lemon juice added 1 large zucchini, grated 1 large carrot, grated 1 apple, peeled and grated 2 cups SR flour (plain or gluten free) teaspoon baking powder A pinch of salt Method: 1) Preheat the oven to 180`C. Grease and line a loaf tin with baking paper. 2) Whisk together the oil, egg and milk. 3) Add the grated zucchini, carrot and apple and stir. 4) Add the flour, baking powder and bicarb soda and stir to ensure all flour is incorporated. 5) Pour loaf batter into the prepared tin. 6) Bake for 50-60min or until a knife comes out clean. 7) Cool in the tin for 5 minutes then transfer to a rack to finish cooling to room temperature. 8) Slice and serve.
