23.01.2022 HERB FOR THE MONTH OF JULY - SPINACH Spinach is a very nutritious green which can be grown in sun but will take part shade. Cut individual leaves, starting with the older, outer leaves and let the young inner leaves remain and continue to grow for a later harvest. If you need to cut the whole plant for a larger harvest, cut about an inch (2.5 cm) above the crown or base of the plant so that it will send out a new flush of leaves. Spinach prefers a well drained non acid soi...l and as it is a fast grower, it is also a heavy feeder. Fertilize with a fertilizer high in nitrogen for dark green healthy leaves. Spinach is low in saturated fat, no cholesterol, high in niacin, and very high in iron, calcium, fibre, magnesium, phosphorus, potassium, riboflavin, thiamin, Vitamin A, B6 and C. Baby spinach is a delicious flavoured small leafy vegetable picked when young and used in salads, steamed, in casseroles, soups and tomato dishes. Larger leafed spinach such as perpetual spinach can last for many seasons if cut regularly. Spinach, when cooked, helps your body absorb more calcium, iron and magnesium as with cooked tomatoes which help your body absorb more their cancer fighting lycopene. Both spinach and tomatoes are very tasty cooked in a basic quiche or slice. Spinach, feta and tomato slice - (serve hot from the oven or cold for lunch) with a garden fresh salad. Ingredients. Oil to grease tray 1-1/2 sheets 25cm x 25cm frozen shortcrust pastry just thawed 2 teaspoons olive oil 1 leek, pale section only, thinly sliced 1 garlic clove, crushed 1 bunch spinach of your choice, trimmed & sliced 100g feta crumbled 10 cherry tomatoes, halved 3 eggs, lightly whisked 180 ml (3/4 cup) pouring cream 2 tablespoons finely grated parmesan Method Preheat oven to 180 degrees c. Brush a 26cm x 16cm slice pan with oil. Line the base with pastry. Place in fridge for 15 minutes to rest. Bake for 15 minutes. Heat oil in a pan over medium heat & cook the leek and garlic, stirring, until the leek is soft. Spread over the pastry base. Cook spinach in a pan until wilted (about 1 minute) Transfer to paper towel. Arrange spinach over leek & top with feta and tomato. Whisk cream, egg & parmesan in a jug. Pour over spinach mixture. Bake 35 minutes until firm.
23.01.2022 Cherry tomato - those little balls bursting with sweetness, like juicy plump grapes dangling from a vine. Cherry tomatoes are best used in salad and are great served whole for a visual effect. Try semi drying them in a slow oven. Cut in half, drizzle with olive oil, sprinkle with sea salt and generous amount of fresh thyme. Lay on baking tray cut side up and cook in slow oven (140/160 C) for a few hours, the longer you cook them the drier they will be. Keep in sealed jar filled with olive oil, garlic clove and more thyme. Delish!

21.01.2022 Perennial of the Month - August STACHYS lanata LAMBS EARS. Stachys (lambs ears) is a species of Stachys native to Turkey, Armenia and Iran. It is cultivated over much of the temperate world as an ornamental plant. Lambs Ears flowers in late Spring and early Summer and produce spike like stems with a few reduced leaves. The plants tend to be evergreen but can die back during cold winters and regenerate new growth from the crowns. They are easy to grow in part shade o...r full sunlight in well drained soil not rich in nitrogen. Lambs ears are a perennial herb covered with silver white silky hairs. They are named because of the curved shape and white, soft, fur like hair coating. Commonly grown for childrens gardens as it is easy to grow and the felt like leaves are lovely to touch. The flower spikes have many flowers crowded together over most of the length on the spike like stem. Makes a good border plant. It has sometimes been used as a medicinal herb and is used as an edible herb called Lambari in Brazil.
21.01.2022 Chia - a bushy annual or biennial herb with large bright green edible leaves and spikes of blue flowers which produce masses of small mottled oval seeds. Seeds can be eaten as they are or sprinkled in salads or on cereal. Great addition when cooking biscuits, cakes and slices.
18.01.2022 Asparagus - a popular and easy to grow vegetable. It will take a year or two from planting but it is well worth the wait. A good source of dietary fibre and protein. Available in purple and green!

16.01.2022 Enjoy your salads but not sure what grows well in winter? Well, two of my favourites come to mind, radicchio and fennel. Radicchio is a quick growing salad vegetable with attractive red green foliage. The leaves are slightly bitter but they cant be all bad as my daughter has loved them since she was a lil tyke. Fennel had a lovely aniseed taste, slice thinly and add to salad or roast/grill and serve warm with a drizzle of olive oil.

13.01.2022 Kale - yes the "new superfood - not so new as we have been growing it at Renaissance Herbs for many years now. Kale is another winter crop that loves the cold and a frost will enhance its flavour. It is high in iron, antioxidants and vitamins C and K. Makes a great addition to soups, stir fry even salads. Available in colours including green, red, blue.

11.01.2022 Herbs for the family pet - just like humans pets need some nutritional supplements. Pet grass will assist in the provision of essential minerals and vitamins. It also helps eliminate fur balls, especially for house bound cats. Upset tummy - ginger tea is excellent for upset tummies. Fleas - Dogs love the smell of anise. Make a sachet of anise and fennel seeds and put in their bedding to encourage them to sleep and the fennel will help deter fleas. Check out our website for further pet help!

10.01.2022 Well the Easter long weekend is upon us...again....how did that happen? What will you be up to this long weekend. Hopefully you will get to spend some time with family and friends. Easter is also a great time to get into the garden and start planning for your winter harvest! Some people dont realise the wonderful array of vegetables we can harvest in the cooler months. Things like cauliflower, carrots, beets, kale, silverbeet, kohl rabi, broad beans, fennel Florence, spinach to name a few. So whatever you are up to this long weekend, stay safe, be kind to one another and try and get your hands dirty! It will be worth it! For those of you who overindulge on the chocolate over Easter, read the attached note - it will help ease the conscience.

09.01.2022 PLANT FOR THE MONTH OF AUGUST BROAD BEAN. Broad beans are one of the most ancient plants in cultivation and one of the easiest to grow. Similar flavour to peas but have a nutty, robust, earthy taste. Herbs such as garlic, chilli, chicory, sage, and thyme all partner well with broad beans. Simply boil, mash or puree to spread on crostini. Add to stews and soups.... Broad beans are low in saturated fat, cholesterol and sodium. A good source of dietary fibre, protein, phosphorous, copper, folate and manganese. This bean can be used fresh or dried. Broad beans prefer a sunny position in fertile soil. Broad beans need to be staked or supported. Harvest beans after 85 days. Regular applications of Season and Powerfeed to keep the plant healthy and producing well. Part to full sun. 08.01.2022 Perennial for the Month - Argyranthemum Frutescens - Marguerite Daisy. Marguerite daisies are favourite plants in Australian gardens. They are long flowering and bring a splash of colour to garden beds or pots. The flowers come in a large range of colours, in single or double flowers and have a good range of large to small flowers. They are a hardy, rounded shrubby plant. Plant in a sunny position in well drained garden soil. Daisies are great for picking, posies, used ...as a feature plant or mixed in with other shrubs and perennials. After each flush of flowers cut the bush back lightly and fertilise. Every six months prune the plant to half to keep it compact. Regular applications of Seasol and Power Feed will keep it looking its best. Height up to 1m.
