13.01.2022 SALMON WITH MANGO SAUCE, SNOW PEAS & CARROT... and broccoli, cause I said so. Most of my surplus of mangoes went into the freezer for smoothies, sorbets, ice creams/blocks & whatevs but I’m playing around with a few other recipes as well. This mango sauce was lovely and even though there’s curry in it, I’m thinking... ICE CREAM!!! I so want to eat it with ice cream.... and maybe sprinkle it with chilli flakes Am I weird??? I don’t care, it’s happening ... Anyway, turns out Elliot doesn’t like Salmon. Which I (secretly) thought was great! Not only did I get two pieces of Salmon, but Elliot got a huge ass plate of vegetables for dinner #notmyproblem I’d make this again, but would back off the salt a bit with the rub I think - touch too salty for me but each to their own What to make now?!?! Still got about 20 mangoes in the crisper! Got any fave mango recipes you want to share??? #tistheseason

04.01.2022 JUST MADE ME SOME VEGGIE STOCK PASTE! I know it sounds weird, but this stuff is hands down my favourite thing to make to ignite and inspire my senses! That super fresh smell of the blitzed veggies and the rosemary! Mmmm the rosemary If you are going to skip a herb with the paste - DO NOT skip the rosemary! (That’s my opinion anyway, but you do what you want.) DID YOU KNOW...?... This stuff last for up to 6 months in your fridge with salt as it’s preservative! Easy, convenient stock on hand for 6mnths! Unless you power through it sooner. This is a stock concentrate which means you are only using 1 or 2 tbsps at a time. If you want a liquid stock, simply add a scoop or 2 to your desired amount of water and tadar - liquid stock! Yes, you can also make meat and chicken stock pastes but if you are lazy like me, just sub this in instead. ALSO... If you’re not using your thermomix lid upside down as a splatter guard when jarring things up - get onto that! AND... Store your stock in a GLASS container to avoid the plastic chemical taste over time - yuck. Medium sized Moccona coffee jars are my faves for housing my stock. This has nothing to do with me wanting to justify the amount of coffee I drink either (it a little bit does ) INCASE YOU’RE INTERESTED IN PURCHASING A THERMOMIX... 36mths Interest Free* is back!
