24.01.2022 Let’s talk about wine and chocolate ... Especially pertinent now in these isolated times... A lot of discussion about pairing food with wine is about savoury foods, the best meals or charcuterie platters to compliment the flavours in the wine. But wine can also pair well with chocolate, but you already knew that right? ... Pairing wine with chocolate is something that is done more so in Europe than Australia or America, but is slowly catching on in other parts of the world. The key is matching the right wine with the right kind of chocolate! Let’s explore this further. If you are drinking a big red wine, a Cabernet, Syrah or Bordeaux etc, a wine with big, bold flavours, it would pair well with a dark chocolate. You want one with a high cacao content and it can contain nuts if you like that sort of thing. If milk chocolate is more your thing, pair it with a nice Merlot or Pinot Noir, a lighter wine that wont overpower the taste, but one that will also not be overpowered. White chocolate goes nicely with a sweeter wine, a Moscato or even a sweeter Rose. A Chardonnay will go nicely with popcorn , salty popcorn is nice, but a sweet, caramel popcorn is even better! 20.01.2022 Let’s talk about grapes Not all grapes are created equal. As you probably know, the grapes you buy from the supermarket are not the grapes used to make wine. Like apples, grapes come in many different sizes, flavours and varieties.... There are over 200 different types of grapes used for wine. Some grapes are suitable to be used alone in making good wine eg. Chardonnay, Merlot and Syrah but the majority are not ideal to produce wine on their own, but work very well in a blend eg. Grenache, Semillon etc. In European countries, there is a cabinet level ministry the AOC who dictates that some wines are only made with certain types of grapes, at a specific level of ripeness in a legally designated wine growing region or appellation. #yourewelcome #winewednesday #wedowine

16.01.2022 Let’s talk about how winemakers get the different flavours into their wines The process of fermentation in wine making does more than simply make yeast turn sugar into alcohol. In fact, it's a highly complex chemical reaction that generates several kinds of acids and other substances, and it also rearranges the chemical structure of the fruit sugars in the grape juice. So the sugars in a Sauvignon Blanc grape, for example, get converted to resemble the sugars in pineappl...e, grapefruit, etc. And the acids become more like citric acid. Other flavours, like leather, smoke, cedar, cocoa, etc. come from the winemaker's choice of the oak barrels in which the wine is aged. Different types of oak (French or American) impart different flavours. It also depends on the toasting on the inside of the barrel, the barrel size, and how long the wine is left in there to age. #yourewelcome #winewednesday #wedowine
