Jared Smith (left) from Headlands Distilling Co, Dom our Bar Manager, and Joanne Davies (right) from Dark Forest Beverages caught up recently at our flagship in Bulli to chat about the "why" of their businesses. For Jared and his team, Headlands Distilling Co began out of a passion for science and sustainability. With access to a high-quality grain farmer, Jared and his business partner were able to control every step of the distill...ing process, creating brews with a focus on sustainability. Using all Aussie ingredients, Headlands started with Vodka and Whiskey in 2015, but these clever clogs soon added Gin to their repertoire.
