13.01.2022 -- Simple apricot and coconut balls for the whole family to enjoy What you will need: Dried apricots (finely chopped) if you don't like apricots you could use dried apple-1 cup... Desiccated coconut-1/2 cup plus extra for coating Sultanas or cranberries-1/2 cup Skim milk powder-1/2 cup Oat bran-1/4 cup Boiling water-4 tbs Chop up all the apricots, combine all the ingredients together using a mixer (if you don't have a mixer you can use your hands). You might need to add more boiling water as you go. Using your hands roll mixture into balls and sprinkle with extra coconut. One cup of dried fruit-you can use dried cranberries, apples, apricots etc (cut into small pieces) 1/4 cup of white chocolate pieces x1 egg 1/2 cup of honey 1/2 cup of shredded coconut 1/2tsp of ground cinnamon x2 oranges (juiced no pulp) Method: Combine all ingredients in a large bowl, starting with dry and the add in the wet ingredients. Bake for 20 to 25 minutes on 180C in a square tin lined with baking paper. Let cool and then cut into bars and wrap individually in baking paper.
