But wait!! don’t throw away the best bits of the pineapple - the skin and the core can be used to make a no waste delicious ferment using what you would normally chuck in the bin. Tepache~ Mexican fermented drink Recipe: ~ In a 2 litre glass jar ~ Place the skin (leaving some flesh on the skin) and core of 1 organic pineapple. ~ Add in some optional spices - I used 1 cinnamon quill, 2 star anise and 1 chopped jalapeño. ~ 1/2 cup of raw organic sugar or honey dissolved in 1 cup warm water. ~ Add sugar water to the 2 litre jar and top up with water ensuring the ingredients are covered (you may need to weigh them down) ~ Cover with muslin cloth and ferment for 1-5 days in a warm spot. Taste daily until it suits your palate, when you see the bubbling activity on top it’s a good sign it’s nearly ready. Harvest and Enjoy!!
